  • Sweet potato cubed, roasted and then used in risotto is yummy, they're also nice roasted as chips they don't crisp up the way ordinary potato chips do but they're still more ish. Or they are gorgeous baked as you would a baked potato, mmmm. I'm stocking up on them this week, they last quite awhile

    Anyone wondering what to do with the sweet potato, I thinly slice them then bake them, sweet potato crisps - lovely!

    Im going to buy more sweet potatoes as well today, I baked them last night and left them in a bit longer and they were lovely. I also have some risotto rice so I'll make a risotto and put them in that.
  • I make sweet potato fritters/pancakes:
    boil steam or microwave your sweet potatoes, mash. For each cup of potato add 1 egg, 2 tablespoons of sr flour, a pinch of cinnamon, around a teaspoon of sugar and a good squeeze of lemon juice. You want the texture of a thick batter, thicker than for normal pancakes. fry spoonfuls in hot oil, turn over when bottom is olden brown and set and fry the other side. Serve with more sugar and cinnamon sugar. I make these every year at the school's open evening and everyone likes them.

    I didn't buy any sweet potato's but my neighbour did and gave them to me as she didn't think she would like them (her eyesight's not as good as it was) she picked them up by mistake so I exchanged with some Maris Piper for her.Trouble is I have never cooked them either I like curry's so would they be OK in them I don't think I've ever tasted them.Any recipes would be brilliant and I'm game to try something new now I have got them :):)I also like soups Did someone mention lentil and sweet potato soup ??? anyone with a few recipes I would love to have a go at

    You can mash them, chip them, cut into cubes and boil them, add to dishes like curries, stews...

    Easiest way to cook them: slice thinly using a food processor and microwave for 2-4 mins until soft and the colour changes. Then serve with butter & black pepper.
  • I bought six bags today, (because the deal finishes tomorrow) I have made wedges, mash, chopped a lot into cubes for adding to curries etc, made some rostis and we are having them baked tonight.

    Does anyone know what next weeks deal is yet?
