May be my experience helps you a bit.

I ended my Vodafone contract recently through pac code. I requested it 25 days before my 12 month contract came to an end. waited until just 4 days before the expiry of my contract and in the mean time had an orange payg simcard ordered.
Just 4 days before my contract comes to an end / pac expires, I called orange and gave them my voda pac code. I did it on the Monday evening and Orange advised me that between 11am-4pm on that wednesday the change over will take place...
on wednesday around 12 of clock i noticed no signal on my vodafone....so removed the voda sim and put in the orange payg card....BINGO...my orange sim now bears my previous voda number.

Did you have to activate your orange simcard by topping up before having the number ported from voda? I'm thinking of ordering one of these free simcards that you see advertised on the net.

I have just ported my number from Vodafone to 3, the number has gone over and I can make and receive calls, but on my phone Huawei U7510, when I check the number under call settings it still shows up as my old number. I have removed the the 3 sim and put it back in, but still shows up as the old number.

Yes it will still show the original number when you go into the phone settings. In most handsets you can edit and change it to the ported number.
