Freezing and Defrosting fruit?

I was just wondering if there are any fruits that don't freeze well.

I think fruit should be frozen laid out on a tray and then transferred to a bag or tub, right?

I am thinking of stocking up on certain fruit when on offer and freezing it, then defrosting as and when i want it or for use in smoothies.

    bananas go black when cold...when i worked in a veg shop we used to wrap them up at night!!! it might be worth a try though! apple would probably be ok if you cook it first, but others might know more!

  • grapes freeze really well but they are best eaten when frozen or semi frozen as the skins go a bit chewy when defrosted I think. Pineapple freezes well and so does watermelon, but bananas are horrible when frozen and properly yucky when defrosted! Apples can be frozen but have a bit of an odd texture when thawed out. Oranges are okay though.

    Hi,

    I often make smoothies and find if I peel my bananas and put in the top section of my freezer - they freeze fine. I use a very sharp knife to cut them in 3 and chuck them in blender. Have had no problems to date :T

    I often freeze bananas that are going soft/black if I haven't got time to deal with them straight away - very good in banana bread and or banana cake...and because they go very soft and squidgy they blend into the cake mixture really easily....I just throw the bananas straight in the freezer with skins on if that helps.

    We have smoothies for breakfast every morning, I freeze bananas in their skin and defrost for a short while take the skin off with a knife and blend the bananas frozen with a mixture of other fruit fresh or frozen and juice. I have tried freezing loads of different types of fruit but because I alway whiz then in the blender before they defrost can't really say what survives and what doesn't, I have accidently left the bananas to long to defrost and you get a really nasty mess. I understand raspberries freeze and defrost well.

    Oooh I'd never have thought of freezing watermelon - does the texture change much when defrosted or is it better to eat it slightly frozen?

  • According to Nigella Lawson in How to Eat, frozen strawberries, once defrosted, take on the look and texture of slugs! I don't know how true this is but might be worth bearing in mind?
  • Bananas freeze well, but peel them first as they're difficult to peel frozen.

    Applesauce freezes really well; I made a few batches last year with free apples, one batch with lemon/lime/orange peel and one with blackberries. Both were delish.

    Defrosted strawberries are fine blended into smoothies, but for eating plain, the texture is better if you slice them and mix with a bit of sugar first.

    Raspberries and blackberries freeze well; the skin on blueberries gets a bit tough when frozen and thawed, but they're good in smoothies.

    You don't have to defrost the fruit before you make smoothies unless you're using a lot of frozen fruit vs. juice/fresh fruit - the frozen fruit will make the smoothie thicker.
