  • This week we are having -

    Wednesday - Sea bream fillets with jacket spuds and cauliflower cheese.
    Thursday - Sliced roast beef from freezer with mash, carrots and brocolli.
    Friday - Chicken in red wine sauce, rice.
    Saturday - Red veg tangine with cous cous and dried apricots.
    Sunday - Moussaka with sprouts.
    Monday - Bacon and lentil hot pot with cabbage and carrots.
    Tuesday - Gingered almond pilaf with garlic bread.

    Puddings - yoghurt, upside down pear tart or fruit.

    Verdict on the Economy Gastronomy slow roast shoulder of lamb and shepherds pie -

    The shoulder of lamb was well cooked after 2 hours but it was not "falling off the bone". There was a lot of fat on the joint, but cooking it this way gave the meat a good flavour and it did not dry out at all. The shepherds pie was OK, but nothing special. Not sure I would cook this again - there are so many other nicer things to try!

    Have done ok so far this week, only changed a few meals, but used things I already had so nothing was wasted by doing so.

    Friday - chicken and leek pie with mashed potato

    Saturday - sweet chilli sausages with butter baked rice/potato wedges (cant decide!)

    Sunday - pizza [STRIKE](not sure what, might make, might buy)[/STRIKE] bought a BIG pepperoni pizza in Asda

    Monday - stirfry with rice

    Tuesday – jacket potato with cheese and beans

    Wednesday – [STRIKE]soup of some description[/STRIKE] had Super Noodles :o

    Thursday – tuna fishcakes with potato wedges

    Friday - it's my brothers birthday on Thursday so we're going out for an Indian this night to celebrate

    Saturday - strifry with noodles (twice in a week, but the bag of stirfry veg is taking up a lot of freezer space!)

    Sunday – [STRIKE]meatballs with something! Going to use my Ikea sauce[/STRIKE] going to do pasta instead

    Hi everyone,

    Not been on for a couple of weeks as had a baby and been eating prepared meals from the freezer as and when we have time! DH back at work this week so normality of some sort can resume:

    Sat: Steak Diane & Potatoes, Broccoli & Sweetcorn
    Sun: Cheeseburgers & Chips, Salad
    Mon: Pasta Bolognese
    Tue: Chicken Curry & Rice
    Wed: Sausage & Butterbean Casserole & Potatoes, Sprouts
    Thu: Peppered Mackerel & Potato Bake (untried, but looks quite easy and had some peppered mackerel in the freezer for months!)
    Fri: Take Away from new Indian restaurant as a reward for spending a week alone with new baby!

    Lunches will be toast, sandwiches, soup or salads. Breakfast will be cereal or toast.

    This is all if we have time and if I remember to eat!!

    Trying to get back in the routine of menu planning Fri or Sat. Have stuck completely to this weeks plan so am very pleased with that.
    Here's next weeks -
    • Mon Omelettes/Egg on toast
    • Tue Chicken curry (leftover chicken from Sunday)
    • Wed Burger in buns, chips
    • Thu Spag Bol
    • Fri Fish Pie
    • Sat Hoison Pork, egg fried rice
    • Sun Roast.

    Sorry got side-tracked last night. Here's the Italian wedding soup. I've tried to convert the quantities to metric as it's originally an American recipe :)

    150g spicy sausagemeat*
    280g frozen chopped spinach, thawed
    1 medium onion, chopped
    3-6 cloves garlic, minced
    olive oil
    2 cups (approx) cubed potatoes, peeled or unpeeled. Baking potatoes work best.
    6 cups chicken/veg broth
    salt to taste

    Saute the sausage and drain off fat. In soup pot, heat olive oil (about 1 tablespoon) over medium-low heat. Add onion & garlic and cook until translucent but not browned. Add spinach, potatoes, broth and sausage. Bring to a boil, lower heat and simmer covered until potatoes are tender, about 10-20 minutes. Ladle into bowls and sprinkle with fresh grated Parmasean (optional but definitely improves flavour). Best if serve with crusty bread.

    It's also one of those soups whose flavour improves over time, so makes fantastic leftovers!

    * the type of sausage this is made with isn't usually sold in the UK, so I modify my own by taking plain sausagemeat and adding loads of herbs & spices to it. Using plain sausagemeat will make this soup very bland so I find this step crucial. Just chuck in things like thyme, sage, chili flakes, paprika, black pepper to create a spicy sausage. If you've got kids, just focus more on the herbs than the spices and it's still yummy :).

    Hopped over here from the daily thread. I have meal-planned for ages and usually am able to stick to it. I find it really makes a difference to the weekly budget. If I'm feeling really anoraky, I go online to Mr. T's or Sainsbugs and cost out the entire shop and then find ways to tweak the mealplan or cut the budget a bit more. DD used to be hugely embarassed by this, but is now as enthusiastic as I am:T

    Strictly Saturday - HM chicken curry (in freezer), rice and naan plus lots of wine and a sparkly dress:D
    Songs of Praise Sunday - Roast lamb (in freezer), roasties, yorkies, leeks and nutterbut squash (My childhood Sunday was always a roast for lunch whilst listening to Family Favourites and the Navy Lark followed by either boiled eggs and soldiers or sardines on toast whilst watching Songs of Praise)
    MasterChef Monday - Frittata (chopped YS peppers in the freezer, eggs from neighbour) tomato, red onion and basil salad (from garden)
    Tuesday - Scone-base pizza, oven chips and salad
    Wednesday - Quiche (bacon needs using up - only got to buy cream for the filling
    Thursday - Sausagemeatballs with spagehetti, tomato sauce and garden herbs
    Friday - Toad-in-the-hole, cheesy mash and baked beans

    This will be the third weekend in a row that I haven't done a 'weekly shop' but have used up what is in the storecupboard/freezer and, boy, is it making a difference to the budget.

    It seems strange to be mealplanning just for me (DH still away all week), but it's best to do it or I will end up living on bread & cheese. Here goes:

    Friday - invited by neighbours, so what was left of last week's plan moves up one day.
    Saturday - bigos and mashed potato
    Sunday - eggplant parmesan (Moosewood)
    Monday - sauerkraut soup, cabbage & carrot salad
    Tuesday - pasta with spinach/ricotta sauce, tomato salad
    Wednesday - pitta bread pizza
    Thursday - spicy macaroni
    Friday - cantonese rice
    Saturday - baked potato with HM cassoulet-style baked beans
    Sunday: Turkish lentil soup

    Still waiting for the replacement lid for my slow cooker! Otherwise this week's plan would have been based around a batch of bolognese sauce.....

    This week, we will probably have:

    Saturday: pan fried haddock fillets, saute potatoes, green salad; apple or banana tart tatin with bought vanilla ice cream
    Sunday: spinach/silverbeet & feta pie with some kind of salad
    Monday: ham, egg & chips (with any leftover pie from Sunday)
    Tuesday: roast chicken thighs with aubergine parmigiana
    Wednesday: cullen skink & soda bread
    Thursday: spaghetti bolognese
    Friday: leftover bolognese turned into chilli, served with corn chips
    Mortgage started on 22.5.09 : £129,600
    Overpayments to date: £3000
    June grocery challenge: 400/600
  • Trying to work our way through freezer stuff and garden fruit n veg
    Fri - reduced price fish from freezer - sprats as a starter (dusted in flour & fried) 16 cost 30p, followed by sea bass fillets and steamed garden veg - pots, fr beans, kohl rabi, leek (& bought carrots)
    Sat - lunch - reduced price pate for them, hm veg soup for me (some put in fridge for rest of week)
    eve - rabbit casserole for him, chick cass for us (jointed chick so lots of portions for freezer), beetroot, kale, rice
    Sun - lunch - soup 4 me, cheese and bacon oatcakes for them
    eve - out with friends for curry (they have a 50% off voucher)
    Mon - vegetarian cottage pies from freezer with veg
    Tue - turkey (frozen strips from a pack a while back, not much there) bulked out with loads of veg and kidney beans (slow cooker)
    Wed - Pasta with lentil sauce from freezer (you guessed)
    Thurs - not sure - see what's hanging around - freezer still groaning with bits so I'm sure we'll find something
    puds - using up plums, stewed apple etc with nat yog; fruit yoghurt as well
    Weight loss - here we go again - watch this space!
