I'm planning opening a pasty shop - what are the profit expectations?

Cheers everyone so far - very interesting.
Trying to work out what apart from pies and pasties compliments such an outlet best - is it worth bothering with sandwiches - for those summer days / the other half watching thier waste?0 -
Open it in winter - hot pies less appealing on a sweltering summer's day.
On a cold winter's day - irresistable.
Edit: Just seen your post. Hot soup is an obvious complement in winter, salad in summer. Or tarts/quiches that can be served warmish or eaten cold in summer. There was a posh pie shop when I was student at Oxford - did a roaring trade all year, I recall.
There are so many wonderful things you can put in pies, esp vegi fillings for posh, rich vegis.
Or a festival I was at last year did pasties/pies with mash and gravy for about a fiver - yummy.0 -
When you go to places like spain or italy, a good tip to find the best eateries is to wait until lunchtime and follow the workmen.
They will lead you away from the tourists and to a dingy looking local restaurant that serves great food and wine at local prices.
