Tuesday and Friday are the easy nights because I am teaching until 5 and will be lucky to get home much before 6.15.
Saturday minestrone soup, toast; Lemon tart and crushed raspberries (a big success, including with son who thinks he doesn't like either lemon or raspberries)
Sunday slow-roasted chicken, Little gem squash gratin, Roasted asparagus, gravy (lincolnshire sausages from freezer for DD if she turns down the meat)
Note: freeze portion of chicken for Friday curry, prepare another portion and keep with gravy for reheating on Tuesday
Monday oven baked risotto, bacon on the side, salad of some kind (BBC best ever)
Tuesday reheated roast chicken, mashed potato, green veg or carrots
Note: defrost pork spare rib chops
Wednesday spiced pineapple pork, noodles & stir fry vegetables
Thursday pilaf with chickpeas & egg, panfried spiced trout fillets

DH will be away as from Thursday, but I'll plan anyway......I can have those favourites he isn't keen on, but it is quite likely that I will be invited by neighbours for some of the days. Here goes:
Sunday: stuffed cabbage rolls and mashed potato
Monday: pasta with aubergine/tomato sauce
Tuesday: stuffed squash (Moosewood)
Wednesday: Tuscan sausage and bean soup
Thursday: spaghetti with olive oil, chili and garlic
Friday: bigos (from freezer)
Saturday: eggplant parmesan (Moosewood)
Sunday: sauerkraut soup (from freezer)
I'm planning to decorate the bedroom during DH's absence, so minimal food preparation time is required. Also I won't have the car, and the shops are 11 miles away, which is a nice bicycle ride, but not when it rains (as is forecast)). So a cheap 10 days it will be!

Sunday: sauerkraut soup (from freezer)
I have 2/3 of a jar in the fridge and this sounds interesting
No problem, Boodle. The recipe is allegedly Austrian. This is it:
500g sauerkraut
1.5 l stock
3 rashers of bacon, chopped
1 onion, sliced
3 tsp tomato puree
1 tsp paprika
1/2 tsp caraway seed
1 large potato, peeled and cut into small cubes
12 cocktail sausages (or some sliced smoked sausage, or chorizo is also nice)
Simmer the (raw) sauerkraut in 1/2 l stock for about 30 mins (if the contents of your jar are already cooked, which is sometimes the case, it needs less time).
Meanwhile, fry bacon and onion together until lightly browned. Add tomato puree, paprika, caraway, and 1 l stock, combine well and simmer for 10 mins. Add this to the sauerkraut and stock, add the potato and simmer for another 30 mins. Slice the cocktail sausages in two lengthwise and add to the soup and continue to heat until they are hot. Check seasoning. Nice served with a dollop of sour cream or creme fraiche.

Had to change mine due to getting the week wrong with the veggie box contents, it's just turned up so here we go again...

Wednesday - Chicken thighs, Mixed Roast Veggies (beetroot, carrots, leeks, courgette) and garlic paprika yoghurt dip
Thursday - whitting fish taco-style pittas with coleslaw and salsa
Friday - Patatas bravas with chorizo
Saturday - M&S Meal in for 2
Sunday - Out
Monday - Pork belly Goulash with rice
Tuesday - lentil/ bean veggie soup
Lunches - tuna pittas with grated carrots and onion or Soup, fruit and a yoghurt
