    Hi - a bit late but here it is.
    Sat & Sun - bits and pieces bought at the Nantwich food and drink festival - smoked mackerel; various pies; potted Morecambe Bay shrimps; various german sausages; walnut bread; pumpkin seed bread - added some hg salad & new potatoes and a courgette, runnerbean and spinach frittata; plum crumble
    My sis and bil were here for the weekend, so this was a bit of a treat.:j
    a very frugal week to follow

    Mon - veggie shepherds pie with roast beetroot (save some mash for Wed)
    Tue - sc veg casserole with potatoes thrown in
    Wed - hm fish cakes & courgettes
    Thurs - hm tom soup, bread & stewed plums and yog
    I do look like a plum now - see - :o
    Weight loss - here we go again - watch this space!

  • Hi first timer here.

    Just realised I haven't got money to do a shop this week so decided to try and feed everybody (2 adults + 2 kids) from what I have in the cupboard. (Although I need to buy milk and bread daily.) So here goes.......

    Mon - Corned beef hash
    Tues - Stew made in slow cooker
    Wed - Arriabiata Pasta
    Thurs - Cheese and Potato Pie
    Fri - In-laws for tea
    Sat - Chips and chicken burgers
    Sun - Some form of roast dinner (with frozen veg and chicken breast)

    KitchenBunny, sorry for late reply...

    I use one of two seasonings - "Rub your meat" (which I bought at a Good Food Show, but I think you can get off the internet) or Schwarz Cajun - both yummy.

    Freakyogre...here is the recipe...

    Just cut 1 chicken breast per person into bitesized chunks; mix with seasoning and a little olive oil to your taste and thread onto wooden skewers - these can either be grilled (as I do) on a medium heat for about 20 mins or griddled.

    The roast veg cous cous consists of any spare veggies I have in particular, red onions, tomatoes (have som HG at the mo), courgette, red peppers, butternut squash (on super 6 at aldi) and sometimes carrots - cut into bitesized chunks and place in a roasting tin, pour over a glug of olive oil and some salt and pepper - use clean hands to mix together and roast in a pre-heated oven (about 220 deg C) for about 20-25 mins (checking after 20!).

    Meanwhile, measure out half a cup of cous cous per person and get the same amount of hot stock (chicken or vegetable) prepared. When the veggies are cooked, pour cous cous into a heatproof bowl, add stock and stir, then add roast veggies and stir again, cover with a plate and leave for about 10 mins. Fluff up with a fork and add a little lemon juice if you like. Serve with the grilled chicken skewers.

    Sat - Sausdage Casserole

    Sunday - Roast Lamb

  • I really need to get back into proper meal planning now I am on Mat Leave. Five weeks before baby is due so I want to make the most of having time on my hands!

    Sat-Shepherd's Pie
    Sun-Toad in the hole with mash and veggies

    Breakfast will be cereal for OH and porridge with fruit for me. Lunches will be home made soup (Leek and Parnsip or Sweet Potato and Butternut Squash), toasties or jacket potato and cottage cheese.
