Hi Guys!
Next week I have a couple of hospital visits, so them nights will be quick/easy meals.
Mon-Sausage Cassarole (peppers/onions/mushrooms/beans/carrots) & Baked Spud
Tues-Quiche, New Pots & Salad
Wed-Lamb, Mini Roasts, Mash, Carrots, Peas & Mint Gravy
Thurs-Egg & Chips (bread & butter:D)
Fri-Fish Pie, Peas & Sweetcorn
Sat-Steak, Baked Spud, Onion Rings & Corn On Cob
Sun-Chicken, Stuffing, Roasts, Yorkies, HG Carrot/Swede Mash, Parsnip & Peas
Lunches-I am trying to get an extra portion from our dinner for me to have at lunch as I need something more substantial than a sandwich or soup etc. Need to put some weight on. DD & OH will have things such as sarnies, soup or something on toast.
Breakfasts are things such as: eggs (scrambled as they go further), toast, cereal or porridge. Always have fruit juice and fruit available or milk. Weekend we sometimes have a sausage or bacon butty.
DD has been having tinned pears in juice most morning along with her breakfast. It says on the tin that a third is 1 portion of fruit but she has half and they work to 18p each serving-not bad I think.
Also fruit juice I bought huge amounts from approved foods last month. 1.5ltr of pressed apple juice at 33p each:D...they are out of date next month but fine. I bought quite alot, but we go through it, so fine:oAlso got DD OJ juice boxes for 15p each for her lunch box.
Bread is bought once a week then I make up sarnies of cheese or ham or marmite or jam and freeze them in bags, so she can pull a lucky dip out each morning;) It cuts down costs and time...ideal if you have to make alot of lunches. DD also likes cottage cheese with crackers...weird child!
If I make a Shepherds Pie, I will make 2 lots of base and freeze one for another meal where I just need to add mash.
So what are you all having?

Hi all, payday at the end of the week so my months plan starts to get a bit sketchy till the money arrives

Sun: Meatballs and mash with sweetcorn, carrots
Mon: Mackerel/kippers with courgettes and roasted veg - anything looking sad in the fridge
Tue: Turkey steaks with baked butternut squash and cauli

Thur: smoked salmon omelette

Sat: Mince and veg with gravy in giant yorkies
Sun: chicken breasts with pesto wrapped in bacon with veg
Lunches will be soups (b.nut squash soup, minestrone soup, leek and potato soup - all HM) hopefully served with HM bread (all being well)
and quesadillas for saturday lunchNewlywed at the point I joined the forum... now newly separated0 -
Got the female parental unit and her OH coming to stay this weekend and it's the end of a tight month (bought 3 items of furniture) so only £30 of the budget left to buy food for rest of month, oh the stress, wouldn't mind if it was just us too but don't want to be rationing the food when guests are staying! Gonna use up some of the cupboard standbys and make it last until next sat!
f - lasagne and garlic bread
s - puff pastry pie, swede mash, potatoes and broccoli
s - hot dogs, mash and baked beans
m - leek and potato soup and quiche (yellow stickered already in freezer)
t - shephards pie
w - veggie burgers and chips
t - jacket and beans
f - 4p curry and rice
s - fish, chips and mushy peas (takeaway replacement - too skint!)
Please note all of the 'chips' are actually potatoes cut into wedges and baked in the oven - am planning to buy a bag of potatoes and make it last for all the meals - haha just realised it's gonna be tatties for 7 out of 9 days LOL, ahh well they're good for you
Shopping list estimate is £22 which leaves £8 left to buy a couple of bottle of plonk, one for the rents when they arrive and one for me to recover with after they're left!:j0 -
Saturday - mini pizza with potato wedges and salad
Sunday - roast chicken with all the trimmings (including my homemade stuffing balls
)

Tuesday - bubble and squeak concoction depending what's left
Wednesday - [STRIKE]chicken stirfry with noodles[/STRIKE] had leftover chicken and leek pie with leftover bubble and squeak!

)
Saturday - [STRIKE]sausage and bean stew[/STRIKE] going to see my brother and sister, so will probably eat there
