Freezing and preserving herbs

Hi,
I have a thyme plant in the garden that has gone into overdrive, I would like to chop up and freeze some before it finishes, is it as simple as chopping up, bag up and freeze or will this just dry it out and make it un-useable?0 -
hi , I would chop it up and add it to some butter, roll it up then freeze, then you can cut of what you need when you need it£223/ £250 GC0

Reviving an old thread but am in the middle of experimenting with preserving fresh herbs as I use fresh pretty much all the time in my cooking. Have had some failures (water in ice cube, tasted odd I thought) and some acceptable, air dry and put in jar (also deteriorated taste).
I'm wondering if anyone has tried anything that gives a just-picked taste?
Particularly curious about the dehydrator options, though I am very anti-gadget I wonder if this is a viable solution?
I guess 'soft' herbs are the most difficult (i.e. basil).
Any views and hints welcome.0
