Yes you can i do it all the time, I just chop the herbs put into ice cube trays and top with water then freeze, once frozen i put em in bags one for parsely one for thyme etc

Then i just add to food whilst cooking the ice melts away

I don't bother with the water - just put them, whole, in bags and freeze. When frozen they just crumble in your hand so you don't need to chop or anything. Works particularly well with soft herbs like parsley and coriander.

I've been getting the fresh herbs from supermarkets when reduced in the evening, chopping and freezing in ice cube tray. This is a great way to have plenty of fresh herbs until mine grow in the garden.

I have an abbundance of parsley at the moment. Is it best to freeze it or dry it?
I want to make some garlic butter, which will keep longer (if not frozen) using fresh or dried parsley?

personally, I would freeze, every time. I find herbs like thyme, bay etc. dry well, but parsley, mint etc lose a lot of flavour. I grow loads of parsley as I love it. I simply cut loads and freeze by shoving in a bag and putting the freezer, no chopping or putting in icecube trays or any of that - far too lazy! You can use as little or as much from frozen as you need - it simply crumbles into your hand and you can put the rest back in the freezer. you can make and freeze garlic butter - but not for too long I think. I would think (and this is only a thought I don't actually know) that the butter would act as a preservative for the parsley - and the parsley would last as long as the garlic in the butter.

Ubamother, how do you grow so much parsley? I have tried so many times but it just wont grow!!!!! So fed up of paying £1 for a small pot in the supermarket.

parsley is odd....i can grow loads and do by just placing it in the garden and it goes like the clappers....my mum cant seem to grow it at all....old wives tale it grows in households where the lady wears the trousers so to speak....i freeze mine and add it to butter for garlic bread and to melt on to steak
    onwards and upwards

I'd probably have frozen it in the past but now I'm in the middle of a HM wine frenzy. So if my parsley does really well this year I'm going to give this recipe a bash. Just an alternative idea to using up any excess you have.
