Hello! The OH and I went down to an Asian supermarket earlier, as we needed some spices and they are so much cheaper there. We needed some curry leaves, and came back with a huge bag of fresh ones :eek:.
Can I freeze them, and if so, how would I do it - spread them out on a tray and then bag them? Or should I just dry them?

Dry them flat between sheets of paper towel in the microwave, on high, for 2 minutes, but stop after one minute and check them and then give them blasts of 10 seconds and keep checking.
Then take them out and expose them to the air, to cool down.
Put them into sterilised bottles and store in a cool place.Felines are my favourite

Been to the Asian wholesalers this morning and whilst there I picked up some fresh herbs, mint, coriander, and basil, (this was bought in bunches).
As there is quite a lot, I wanted to know if it can be frozen, if so how's best to do this, wash then bag then freeze, or should I just wash then throw it straight into the top drawer of the freezer unbagged?

Wash, dry, loosely bag, freeze. When frozen, I 'scrunch' mine up so they are ready chopped
You can also freeze whole green/red chillies like this, just chop as normal when frozen and bung in your recipe!

nope, if herbs are on woody stalks I'd 'strip' the leaves off first, but coriander is fine all in, alternatively you can chop herbs first then freeze immediately in small plastic boxes/bags.0

I always keep fresh coriander in the freezer, as it comes and chop from frozen. our chillies are stored frozen too
