The prawns are so simple there's no recipe: just cook the rice in coconut milk (from a tin) rather than in water (you might need to add a splash of water if the coconut milk's quite thick); while it's cooking, heat up some sweet chilli sauce, add the sweetcorn (fresh for me this time, but tinned/frozen works, too) and some defrosted frozen prawns, and heat through. Serve the saucy prawns poured over the sticky rice. It's a recipe my dad taught me - so simple but so good!
I'd like to second the request for the chicken burgers recipe, though, please ladymarmalade - they sound scrummy!
Thanks, that sounds yummy! I have a tin of coconut milk that I keep putting off using as there's only me, so didn't want to waste it by only using a bit. I suppose I could make up more rice and freeze any I don't use this way though.Grocery challenge - Nov: £52/£100

I haven't tried freezing the coconutty rice but I can't think of any reason why you can't. Coconut milk on its own freezes well - it tends to separate a bit when it's defrosted but a quick stir sorts it out. I do this quite a lot - I'm also on my own and find a whole tin of coconut milk's too much for me, too - why can't they make small tins?

Ok, had to have a bit of a change-about, as I didn't have everything in front of me and haven't got my meals in the right place! Changes above...
So basically, I had the wrong week in place. Oops.

I love reading all the plans on here! What a saddo I am!
Anyway here's mine
Still using up some veg from garden
Fri - used up a few whole prawns & some sprats from freezer - all on bbq served with salad and bread roll
Sat - lunch - cheese and crackers - hm pickled onions and last years chutney! ( was going to be hm soup, but both pressure cooker pans were in use making glutney)
eve - crab salad starter, turkey & veg stir fry & noodles
Sun - lunch - cheese & bacon oatcakes (local speciality!) (only for OH and DD not me - I'm on no point veg soup)
eve - roast chick with courgettes, pumpkin, kale, potatoes/ stewed plums and yog
Mon - risotto made with left over chick, pepper, mushroom, courgette
Tue - Pasta & toms roasted with garlic
Wed - Pies(leftover from hubbies & mates pie and real ale night!) quorn for me vveg as usual
Thurs - Soup (chick carcass etc) and a pud
Fri - fish from freezer and veg
M-F lunches - I always have fruit & yog at work, OH & DD have sarnies (leftover chick/ham also hummus & pitta etc)
puds are always fruit/yogWeight loss - here we go again - watch this space!

I like this thread. I'm using up the latter half of my 2 week shop just now.
Sat: leftover chorizo pasta hot pot
Sun: Lasagne and salad
Mon: Roasted sausages and veggies
Tue: Leftovers from Monday with extra veg
Wed: Cheesy pasta
Thu: Cottage Pie and veggies
Fri: something with leftover cottage pie mix, maybe spag bol
Sat: Food shop
Lunches will be HM soup or leftover tins of beans etc from our last camping trip. Should only have to spend an extra £5 on yogurts for breakfast and some fresh veggies.0 -

Sun: roast Lamb, Roast Pots, cauliflower cheese and mixed veg.
Mon: H.M Quiche Pots and veg.
Tue:Sheperds pie (leftoverlamb)
Weds: Jerk Pork, Jacket Pots. Kids Jacket pots cheese and beans
Thurs:Sausages mash and broccoli.
Fri: Lamb curry and rice (leftover lamb)
Sat: Ham egg and bubble (leftover veg)
Lunches are leftovers or sandwiched in the lunchbox. Breakfast is porridge and fruit or toast.

I planned for a whole week ... but forgot I'm away on Thursday night (conference in London) and won't be back until late Friday. OH doesn't follow my plan if I'm not here, and I'm not inclined to fuss about it as I'll be sitting in a restaurant on my own with a book, oh bliss!
Saturday: lamb tagine from this month's BBC good food (removed a portion to serve without meat for daughter), couscous
Verdict: not as nice as I expected, daughter's bit was horrid possibly because I burned it.
Sunday: nut loaf, vegetables, roasties, gravy
Monday: chicken thighs (bone in) cooked with lots of garlic, potatoes, vegetables
Tuesday: tagliatelle with sardines, breadcrumbs, sultanas & pine nuts, salad
Wednesday: leek, cheese & bacon tart from this month's bbc good food magazine
Thursday: OH will probably cook carbonara, which is one of the few things he's good at
Friday: I suspect OH will get pizza; I'll have something on toast when I get in at about 9pm.
Other stuff: I'll make two batches of muffins today, to put in lunch boxes. Or maybe one batch and the orange cake from the Jane Grigson fruit book.
The mix-up means we still have in the freezer: smoked fish, 4 chicken thighs, 3 pork loin chops, pork mince, and two bit so unidentified frozen meat. Have swapped a veg around today as we got a cauliflower from Aldi cheap and will do a Cauli cheese and carrots/peas instead...yummy! Beef has been in SC since 8.30 and smells lovely already. Beef from Lidl reduced to £3.11 for a topside joint, hopefully big enough for roast and a round of sarnies tomorrow.

The isnt really a recipes for the pesto chicken burgers. Just get some chicken breast and cut them in half so they make a thin burger and then spread some pesto of you choice, I like basil, over the pieces of chicken. Griddle them and then serve as you would serve a normal burger....quick, easy and tasty.

Following shopping at Mr Ts today here's my plan......
Sunday - chicken parcel stuffed with sausagemeat (quorn sausages for me) with roast potatoes, mashed potatoes, peas, green beans, yorkshire puddings and gravy
Monday - OH chicken curry portion form freezer, sweet potato curry with naan for me
Tuesday - OH playing footie so just has something on toast, curry leftovers for me
Wednesday - gnocchi with red pesto for OH, jacket potato with beans and cheese for me
Thursday - fajitas for both of us
Friday - omelettes and beans0
