I know it's nearly the end of the week when the meal plan thread appears! :D

My meal plan for last week largely got abandoned as I had a nasty bug which destroyed my appetite (and I've got to be really unwell before I stop being hungry :o). I'm feeling brighter (and hungrier) now, though, so the following should get eaten this time:

Tonight - pasta with garlicky kale and courgette, cambazola cheese and walnuts
Friday - salami and pepper pizza (I'll buy a cheap cheese and tomato pizza and add extra toppings)
Saturday - out at the football thanks to a friend with a spare ticket :j, so it's lasagne from the freezer when I get home
Sunday - roast chicken, chips and salad, then lemon souffle (M&S dine in for £10 - only me so lots of left over chicken)
Monday - chicken and veg chow mein, lemon souffle
Tuesday - chicken and coconut curry with naan bread (bought, sadly, as I go out Tuesday evening and it's always a bit of a rush)
Wednesday - prawns and sweetcorn in sweet chilli sauce with coconut rice
Thursday - pasta with roast veg and cheshire cheese

Breakfasts are the usual cereal/porridge and fruit or hm bread and jam/peanut butter; lunches will be roast chicken and mayo sandwiches, then cheese salad sandwiches when I run out of chicken, then leftover veggie pasta on Friday.
Back after a very long break!

Thanks for all your ideas! There is a lot that sounds tempting.....
I still have so much stuff coming out of the garden, and meat and other ingredients in the freezer that I don't think I need to do a shop this week (just as well, as we got the car serviced today :-(). The plan currently looks like this:

Today: courgettes baked with a cheese, ham and boiled egg filling - couscous - tomato, rocket & red onion salad
Friday: vegetable gratin and tomato pilav
Saturday: ham & cheese plait, mixed veg salad
Sunday: American style cottage pie, sauteed courgette with garlic & herbs

    Monday: tortilla beany bake
Tuesday: pasta with vegetables in lime-peanut sauce, tomato salad
    Wednesday: HM pizza with sardines
Thursday: spinach/brown rice bake (Moosewood recipe)
Friday: grilled steaks, HM wedges, green & white bean salad
Saturday: courgette & crab gratin, rice
Sunday: CCP's pasta with garlicky kale, courgette, blue cheese & walnuts sounds good!

Enjoy your week, and bon appetit!

  • This is going to be interesting, as my mealplan isn't saved to this machine. Let's see what I can remember...

Friday: Lamb Tikka Kebabs with salad
Saturday: Homemade Lasagne with Salad and Garlic Bread
Sunday: Not sure. I might make a pie though
Monday: Leftover Pie or Thai Curry
    Tuesday: At Mum's
    Wednesday: Omelettes
    Thursday: Sweet and Sour Chicken
    Friday: Chilli Con Carne
Saturday: Leftover Chilli with Pasta and Bacon
    Sunday: Uncertain

Lunches will be bits and bobs of leftovers; whatever is about, really. Failing that, sandwiches will be the order of the day. Breakfasts (I must start eating breakfasts again...) will be cereal, and any snacks will be fruit. I'm going blackberrying again tomorrow, so there'll be more mini crumbles for the freezer if I've got enough little ramekins. I just bought some mini foil trays though (pie trays) so I'll probably just use those.

In the fridge to use up I have:

    Rubbishy old grapes
    Plums
An end of bread to zhuzh into breadcrumbs for the freezer

Everything else is in date and will be used. I'm getting the hang of this OS thingy!

The prawns are so simple there's no recipe: just cook the rice in coconut milk (from a tin) rather than in water (you might need to add a splash of water if the coconut milk's quite thick); while it's cooking, heat up some sweet chilli sauce, add the sweetcorn (fresh for me this time, but tinned/frozen works, too) and some defrosted frozen prawns, and heat through. Serve the saucy prawns poured over the sticky rice. It's a recipe my dad taught me - so simple but so good!

I'd like to second the request for the chicken burgers recipe, though, please ladymarmalade - they sound scrummy!
