How do you make cauliflower cheese quick?

    For the caramelized onions............
    Slice onions and saute in pan with olive oil (you could use other cooking oil I expect), over very gentle heat, stirring occassionally, until the onions go bown and crispy. This can take a good while, depending on how many onions you are doing. Haven't really timed it myself to be honest, but for two large onions, probably about 30-40 mins....ish.
    I normally do this for putting on top of dhal and add some chopped chillis....truly scrumptious!

    Hummm never tried it with onion before, might try this next time as I make Cauli-cheese for the veggie wife quite often but find it a little boring (used to love it). That said I do add a bit of choped up bacon for myself these days.

    I have often made a cheese sauce with little or no cheese and my family have been none the wiser ;)

    I always use the microwave - heat the flour and marg first for about 20 - 30 secs then mix that and add the milk then back in mw for a few minutes. I usually check it every 30 secs or so and give it a stir, just before it is finished I add a small amount of low fat cheddar or low fat babybel (which I think slimming world likes) then I add a small spoonful of mustard. I think the mustard gives it a bit of colour as well as a little zing.

    And if I do use cheese I grate it and put on top of the bake half way thru cooking - if I have fresh mozza I would slice a little and add that after the grated cheese but I use very little anyway.

    My local Tesco Express has Healthy Eating fresh mozza on the "cheapies" shelf at least once a week, usually about 20 or 25p. I think we must be the only ones who buy it!

    Oh and tigs good luck with the diet - I have been meaning to start one for about 6 years now!

    Just thinking about your bag of grated cheese, and in the spirit of money saving :smiley: Asda do a great little cheese grating bowl for just over £1...it's like an oval tupperware type dish and it comes with a lid that is a grater so you grate into the bowl, there is another lid which is a sealed cover so you can grate a block then keep it stored in the same dish in the fridge. Excellent little piece of kit and it is a doddle to use. I used to hate the hassle before but I am a confirmed grater now LOL

    Could anyone tell me how to make a cauliflour cheese dish please? Does the cauli need to be cooked before it is in the dish with the cheesy sauce (to then be cooked in the oven)?

    I have some cheese to use up & blanched cauli in the freezer. Thought it'd make an easy meals for the kids. Can anyone help please?

    :DIt's lovely (it's a ww recipe and 2 points per serving) everyone ate it non left for me:mad::rotfl:
    1 diced onion
    2 garlic cloves (I grate mine in)
    600ml (20floz) veg stock
    1 extra large cauliflower cut into florets
    2 bay leaves
    75g (23/4 oz) extra mature cheese (I used mature & mild coz that's what I had)
    2-3 tsp mustard
    50ml skim milk
    Put onion & garlic in a frying pan (lidded) with a bit of water & cook until tender about 8 mins adding more water if necessary.
    Meanwhile boil stock cook cauliflower until tender 5 mins. Pour into frying pan with onions add bay leaves cover and simmer for 15 mins.
    Remove bay leaves puree mixture in blender put in pan and add cheese, mustard and milk warm through and eat. Yum

    Does make it really thick so you could always add a bit more stock, we've even had it as a sauce on gammon and roast veg!

    My LOs love it, my OH and my Dad were not happy when it had all gone!!

    i jst boil the cauli drain it let it steam off a bit

    pour hm cheese sauce on top black pepper and cheese grated and bung in oven for 10 mins

    If you had a bit of mustartd to the cheese sauce it brings the flavour of the cheese out
