How do you make cauliflower cheese quick?

It will go soggy don't you think if you cook it first?
I would risk using it frozen and put the lot into a pre heated oven. I don't think frozen cauli takes very long to cook.

Why not let the cauli defrost before pouring the cheese sauce over it, then bung the lot in the oven for half an hour or so?

I uise frozen cauli for cauliflower cheese and bacon and I cook it first. Well when I say cook I mean I bring it to the boil and give it a couple of minutes.
Likme most frozen veg it doesn't need very long.
And its never been soggy...0 -
I boiled the cauli in a pan for 5 mins whille I made some cheese sauce then put in oven dish,topped with cheese sauce,breadcrumbs and grated cheese....it smells luvly..almost done, hope its yum! :Tlove my little man he is amazing :j0

I am soon to embark on my 23rd annual diet and this time I'm serious about it. So that I am not tempted to cheat early on in the diet I am eating all the nice things that I won't be able to have when I start my diet. In Tesco Express earlier today I saw cauliflower cheese and being an OS convert I decided that I would try and make it.
I bought a cauliflower and some grated cheese but on my return home I noticed the cheese is grated mozzarellaWill it be OK to use mozzarella instead of 'normal' cheese?
Will have a search through the archives for a recipe unless anyone has 'Quite possibly the best cauliflower cheese recipe... in the world - ever' that they'd like to share with me.
Also my Mum used to have crispy caramelized oninons on the top of hers, any ideas how I would go about that?

I don't think it will be tasty enough.

Half and half sounds like a nice idea. Moz will give you a great 'stringy' cauli cheese, if that's what you like. (I do!)Ex board guide. Signature now changed (if you know, you know).0

I thought as much, I think I am finally starting to get a 'cooks head' on me and know the real answers to my silly Q's but don't have the confidence to believe in myself.
I don't have any 'normal' cheese but I do have a tub of fresh cheese sauce which is meant for pasta, I'll just use that and add the mozzarella for string factor. It's a shame though, I was quite looking forward to making the roux sauce.0
