I did cheat this time, I had a packet cheese mix, but thanks all for the great tips I shall definately try the HM roux sauce next time!:T
I cooked cauli then poured on sauce and put under grill, the sauce was quite thick when i put it on, but under the grill the sauce went abit more runny except the top of course - is this right? tasted fine anyhow and i ate it!

As others have said there is nothing to making cheese sauce - a bit of butter/marg in a saucepan a bit of flour and mix/beat over the heat (this will cook the flour) into a dough like, start adding milk a bit at a time - I add around half teaspoon of mustard powder to give it a little bite (lovely) and a pinch of nutmeg. Keep adding some milk until the consistency is just nice and add grated cheese.
I cook the cauli first but only until it is just ready (not overdone). Put cauli in a dish pour over the sauce. Grated cheese over the top, sometimes I sprinkle cheese and onion crisps (open a bag and crush them into bits) it gives a lovely topping. Put in the oven for around 20mins until golden brown.
Making the sauce is a two min job - nothing to it, and the staste is georgeous. If you try and make your own you will never go back to packets, and you know what has gone into it with no artificial additives! How much are packets of sauces? I bet they are dearer than making your own and no strange artificial taste0 -
thanks, well the packet colmans cheddar sauce is 37p in asda, which is pretty cheap.

A nice pinch of chilli powder is good in the sauce. I also put in fresh chopped parsley or chives to give more flavour and reduce the amount of cheese to reduce the fat content.An average day in my life:hello: :eek::mad: :coffee::coffee::coffee::T

Shez, cauli is quite a watery veg so it's pretty normal for your sauce to go a bit thinner as the liquid comes out of the veg. It shouldn't affect the taste though.
It might be a bit dearer to make your own sauce but you don't get that 'smelly sock' cheesy taste that you get with some packet sauces, it tastes sublime, there are no nasty chemicals in it AND you can make as much or as little as you like.
.......Just keep whisking as it cooks and turn the heat off a minute before you pour it out of the pan so that you aren't left with a burnt layer on the bottom of the pan.Just run, run and keep on running!0 -

Hi,
I want to make cauliflower cheese for tea tonight...I will be using a packet of frozen cauli, will it cook if I just put the frozen cauli in an ovenproof dish,pour on cheese sauce and bake in oven or do you think I need to boil the cauli first?

I would cook the cauli first, just to heat it through and make sure it's not frozen in the middle. You don't want to bite into a cauliflower ice cube during your dinnerJust run, run and keep on running!0
