Maman, I have this copied from a post Hot Chick made a week or so ago - not tried it myselfYou heat the skimmed milk to just boiling, then mix some corn flour and water to make a runny mix, then add the paste a little at a time whisk into the hot milk til it's the thickness you want.
One virtually fat free White sauce!
I always use long life skimmed, it's a lot less watery than non long life, or use semi-skimmed that'll work just fine too :-)
You could use arrow root powder in the same way ...A little nonsense now and then is relished by the wisest men :cool:

I reduce the fat content a little by using some of the cauliflower cooking water and semiskimmed milk. Hope my husband dosn't read this but he needs a bit of help with his diet and he hasn't complained yet!0

In my opinion a cheese sauce is always improved by adding half a teaspoon of English mustard. Note, don't boil the sauce after adding the cheese as this can make the cheese go all stringy.0

Thanks for the quick response.
However, I ain't got no steamer. Would I be able to use a collander over a saucepan with a lid over the cauliflower? Or could I just boil the cauliflower but make sure it is drained really well0
