Eggs usually keep well beyond their best before date (I've been known to have them six months afterwards with no ill-effects). So if you're going to use them up in the next few weeks, I wouldn't worry about trying to freeze them.0

Thanks for that candyblue, the muffin tins are a very good idea! I do freeze egg whites sometimes when I have them left over from making custard etc. - but always struggle with the quantity when I re-use them. Yes, if you beat them up, so that the white and yolk is mixed thoroughly, you can freeze them for use in omelettes or in cakes, or anything else that uses beaten eggs.0

it also includes info about doing the float test for freshness, because, as other have mentioned, eggs stay edible waaay beyond the dates on the box

thank you for the comments and the links. Seems the eggs will last longer than we think. I expect the BB date on them are just so we are eating them at their freshest.

I knew I should ave copied it out when I saw it, but I saw something the other dat about freezing separated eggs with salt/sugar and I can't find it now :rolleyes: !

I think you have to crack the eggs and freeze in bags two or three at a time, handy for taking out and making cakes0

I do this. You know those mini tupperwares that you get and never really know what to do with ( aside from storing pins!)
I break an egg in there, splash of milk, then stir with fork. Freeze.
I then take them out in advance good for baking/ omelettes/ or just having in for breadcriumbing etc.:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
