  • I haven't posted my meal plan for a couple of weeks but have been sticking to it and my budget :) DH wants to lose a few pounds and I want to lose a couple of stone or more so trying not to have chips, eat more salad and less red meat and generally serve up some leaner, healthier stuff. Trying to do it using up what's in the freezer and take advantage of Aldi's 29p deals as well. Some of this weeks meals (*) are based on recipes in my Easy Cook mag, I was chuffed that I had everything in bar some fromage frais, so nothing to buy.

    Mon - Marinated Curried Chicken, New Pots & Salad
    Tue - Pasta Bolognese & Salad
    Wed - Tuna Baked Potato & Salad
    Thu - * Curry Crust Salmon, Jacket Wedges & Salad
    Fri - Chicken Korma, Pilau Rice, Cucumber & Onion Relish
    Sat - Turkey Sausage Casserole & Jacket Wedges
    Sun - * Lemon Pepper Chicken, New Pots, Broccoli & Green Beans

    Puds & Treats

    Yup I know were wanting to lose weight but puds are still okay as long as they're low fat and made with healthy ingredients. Going to try making the muffins with S/R wholemeal flour :)

    * Banana Rice Pudding
    * Basil Peaches & Raspberry Pavlova Ice Cream
    Banana Bran Muffins (from Economy Gastronomy prog)
    Apple, Sultana & Cinnamon Muffins
    Sugar Free Jelly, Fruit & Ice Cream
    Flapjacks

  • Well I had decided to do a menu plan this week and so far (day 2) have been OK. Using freezer stuff as much as possible and need helpfor Friday please. Have old white fish ?? crab sticks, frozen prawns (few) even tinned crab/tuna/salmon, so was thinking of a fishy pie thing - I dont really like real fish pie so finding it tricky. Fed up with pasta. Any bright ideas, would like to use up all the frozen stuff. Oh cooking for 1 and would PREFER not to put another meal back in freezer Thanks
