    They sound amazing, particularly the gratin and my mum would love the fish stew with fennel.

    Courgette-crab gratin

    I make this lots during courgette season, as it is cheap, light and summery. But note that tinned crab is really cheap in France. You could also use shredded surimi, prawns or salmon for this recipe. Serves 4.

    2 tins of crab
    2 good sized courgettes
    150 g gruyere (cheddar will do fine), grated
    200 ml creme fraiche
    salt & pepper

    Rinse the courgettes and cut them lengthways into thin slices. (I use a cheese slicer for this, or one of those broad serrated peelers). Mix the grated cheese and the cream together in a bowl;
    In an ovenproof dish, place a first layer of courgette slices. Season with salt and pepper. Next, a layer of crab meat. Then a layer of the cheese mix. Repeat the layers, then finish off with a layer of courgette and layer of cheese/cream mix.

    Bake in oven at 180°C for about 45 minutes.


    Crumble chevre-courgette

    Serves 4

    200g courgettes
    2 tbsp semolina
    200g fresh goat’s cheese
    2 tbsp fresh mint, chopped
    2 tbsp olive oïl
    30 g walnuts, roughly chopped
    30g breadcrumbs
    salt & pepper

    Grate the courgettes into a sieve or colander. Press to extract their moisture as much as you can. In a bowl, combine goat’s cheese and mint together with a fork. Add the grated courgettes and the semolina, mix thoroughly, season and transfer the mixture to an ovenproof dish. Mix the walnuts, olive oïl and breadcrumbs together and use as your crumble topping on the courgettes. Bake in oven for 20 mins. Serve hot.


    Summer fish stew with fennel

    I’m making this recipe for the first time - so it is not tried and tested yet! Here goes - serves 4

    Chop 1 onion, 1 green pepper and 1 fennel bulb and gently fry in a little olive oïl until soft. Add a glass of white wine, simmer for a minute or two, then add a tin of chopped tomatoes (or if you have a glut of them, use fresh ones whizzed in the food processor in a similar quantity). Add about 200 ml of hot water, simmer for 5 minutes.
    Then stir in 250g of cooked rice, and finally add 400g of white fish fillets, cut into chunks. Cook until the fish is done. Check seasoning and serve with fresh parsley on top and lemon wedges on the side.


    Chickpea-chorizo stew

    From another much appreciated OS-er - this has become a favourite in our household. I tried a search but haven’t found it - and the saved version is not on this PC. Will post it tomorrow.

    Thursday - Tuna canneloni
    Friday - Pizza
    Saturday - Smoken salmon spag (or possibly BBQ at mate's)

    Sulk. I know... My daddy is Breton and I'm a very proud demi-Bretonne. I miss France so very much, in fact any time anything goes wrong in Wales or Barcelona, I scream and shout and throw myself about saying I want to go back to Landivisiau! :o Then when Landi is rubbish (four months of rain, I swear.) I pine for Barcelona or even the mountains of Snowdonia. :rotfl:

    "Well, probably it will be onion, garlic and chopped chorizo fried in a little oil. Then some chopped veg thrown in -carrots, peppers most likely. Some chickpeas from my freezer (about a can's worth), some frozen sweetcorn and a carton of passata and probably a splash of sherry. Bring to a boil then shove in the oven for 30 mins -1 hour. I'll serve it with baked spuds or cous cous I think."

    Not posted on here in ages but Economy Gastronomy has got me kicked started again...:rotfl:

    Today - Monday Night Rice
    Tues - Fish Pie
    Wed - Out with work
    Thurs - Pasta with stilton and bacon sauce
    Fri - Chickpea tagine and couscous
    Sat - Cottage Pie
    Sun - Off Camping...Yay :beer:

  • Here's my plan i am going to try and stick to it as best i can i think some days may be swapped arounld depending on who's in and who's out some times my house feel's like a cafe, yesturday had to feed me dd1 dd2 and dd2 bf roast chichen and all the trimmings then one of dd1's friends called saying she was starving and as she was coming rounld any chance of dinner? and then because other half dose not like a roast diner did him chilli from frezzer.
    so here gose,
    Monday something with left over chicken probably Pasta bake. Plus boil up the bones for stock
    Tuesday stir fry chicken with veg and noodles from leftovers
    Wednesday Susage Cassarole with pots and veg
    Thursday rice pilaf with some bits of chorizo that needs using and bits of veg.
    Friday just me and other half omlette and salad.
    Saturday Dinner at mil.
    Sunday if weather is ok bbq but if not will have to put my thinking cap on.
    I have everything in so no need to go to Mr Sainsbugs than to work(I work at mr S will have to try and avoid all thouse bargins)

    Sat/Sun - away at FIL's so not sure yet

    Newbie here but really getting into this money saving lark and loving it. Here's my MP for the week.

    WB 10th Aug 2009

    Weight Watchers Recipe – batch made in freezer – Beef in Prunes (YUM) with mash and peas. Going to make a treat of tracle tart and custard, already have ingredients.

    Tues
    Out to see Jimmy Carr :D so eating out, on OH YEY.

    Wed
    Spag Bol, pasta and Garlic bread – haven’t had it for a while.

    Thurs
    Shepherd’s Pie, my way ;) One pot.

    Fri
    TBC – Will raid fridge/freezer and pantry for something a bit special for Friday night in. :o

    Sat
    Lasagne, Garlic bread and salad (Salad to buy)

    Sun
    Chicken Roast Dinner (Veg to buy)

    Sorted :T Should cost < £5 this week.


    Lunches will be “something” with jacket potato as have a glut :confused: but no extra cost. Always good to hear.
