Blackberry Charlotte
There was a recipe on Saturday Kitchen last weekend which went like this:
Get some tiny individual pudding basins (there's probably a proper name for these but they're about 3" tall).
Melt butter
Cut up a slice of bread into wide strips (quarters), dip in butter, line the sides of each dish with these (butter side outwards).
Take another slice of bread and hack out a piece big enough for the bottom, dip it in the butter, place it at the bottom.
Cook up blackberries with a splash of water and a spoon or so of sugar for just 2-3 minutes (so they're a bit soft)
Spoon blackberries in.
Hack up another piece of bread to make a "lid". Squash it down a tiny bit.
Shove in the oven (he made four and put them into a baking tray, but I can't remember if that had water in)
Cook for about 3-4 minutes.
Remove, serve, .... and as it was the telly, he served it with freshly made custard he whipped up from scratch in that 3-4 minutes.

As most people will have been lately I've been out picking blackberries
So far I've got 710g, but as you can imagine the supply is pretty much endless
I'm after some interesting recipes to use them with, not baked stuff, but more jarred and bottled
Any wacky recipes out there?0 -

Oh gosh yes! Blackberry whisky!! Bottle (70cl) of whisky, 600g of blackberries, 300g sugar (can always add more if you like later). Leave for 3 months. Use the blackberries for dessert and the whisky liqueur for drinking.
