    I owuld ahve thought it would be ok as it's just fruit and sugar really, similar to jam (or at least my recipe is). I;d be tempted to freeze in ice cube trays so that oyu can get out as much as you need each time.

    If the jars are sterelized it should keep for a few months just in the jars I think. I am hoping so because I made way too much as well!

    You can make a wicked curry with it as an ingredient or as a marinade over ribs/pork roasts ect.

    I know you haven't asked for recipes but I do a really good mango chicken with rice and peas. The recipe is in the first couple of posts in the Gocery Challenge :)
