Rabbits are lovely. Truly an underrated and underused meat in this country. Never understood why people are so squeamish about eating them as they are just countryside pests!

OH does a lovely recipe poaching it in cider with carrots, onions and leeks. Goes down a treat with sauteed potatoes and a chunk of crusty bread to mop up sauce.

Didn't get to watch it tonight as got home from work late :(

    Will do catch up later.
Am catching up after missing the last two programs (bf's sky didn't record when we went on holiday!).

Would you be able to give the recipe for this rabbit dish, please? I'd love to try rabbit and this sounds lovely!

Oo a customer gave hubby 725g of toms from his greenhouse so I am definitely going to do the tom sauce and meatball recipe now.
    A few questions first please.
It says a Fennel head - how much is a fennel head please? Never seen one before! :o Also, crushed fennel seeds, would I find those in the dried herbs section?
"Cooking chorizos" - would this be on the deli meat counter or with the pre-packed cooked meats?
Sorry for all the dumb questions but never used those ingredients before.
The recipe states 750g pork mince but I'm sure 450g is sufficient for 4 people.

Lidl sell a really, really great chorizo sausage...it's vacumn sealed so you'll find it on the shelves near the chill cabinet with all the other dried cured sausage things. It's only £2.40-ish as well, for a huge one, so a good buy.

A fennel head can vary in size but about the size of a man's fist would be average. They are sort of aniseedy in flavour. I put some mushrooms in instead. I also used some pork sausagemeat that I had in the freezer rather than buying mince, rolled it into balls and baked them in the oven for ten minutes rather than frying them. I used a pinch of mixed dried herbs too. No, it's not the correct recipe but it tasted fine and meant I used up what I had in the fridge and freezer.

  • I forgot about looking in charity shops for cookery books. I have to say the programme has really made me and my hubby think about how and what we spend our money and we are enjoying cooking from scratch.

Finally, can anyone point me in the direction of the fish cake recipe as I can't seem to locate it on the EG webpage?

    Thanks! :)

Hi...this is what a fennel looks like:

You can buy chirizo either at the deli counter or prepacked. I've seen it displayed in different ways in different supermarkets, so it may come in slices, like salami or chopped up little chunks like bacon bits. I'm pretty sure that fennel seeds will be with the dried herbs. I'm sure you'll be fine with 450g of pork. Will go look for the fish cakes :D

  • made the braised mince today. i had two 500gm packs (good quality steak mince from the local shop) so made one with onions which then went into the oven to cook because i dont have enough large pans. the other one was onion free and left to simmer on the hob. this smelt the nicest. hte oven one didnt smell so good. hubby thought both were good. hob one thickens up nicely on the hob whereas the oven one didnt. i do think passata would have been the better choice though. it would have made it more thicker/creamy looking. i have about a pans worth left. was going to make the chilli then noticed it has chillis etc which i dont have avail. not sure out of 1kg mince i could make stretch three meals though.
