All-purpose flour is plain flour (you can work this out from the fact that the recipe includes baking powder... I know you can do that, you've made cakes before!)

If you come across some measuring cups though, it's worth buying them (cheap, obviously) as it's much less hassle than weighing things, you just scoop it up and bung it in!0 -

I bought a McVitie's Jamaica ginger cake on Friday and forgot it was in the bottom of my bag as I merrily loaded stuff on top of it. Dug it out yesterday to find the whole thing flat as a pancake & probably all crumbs.:wall:
Not happy as I was really looking forward to it, so determined to find a way reincarnating the cake as a new bettter yummy treat., even though it would probably be easier to brave the shops and find something.

I would either - heat up in microwave and serve hot with custard (doesn't matter what it looks like then!)
Or - make into a kind of trifle with the cake bits at bottom, some fruit maybe above this and then cold custard/cream on top.
Whatever you do - enjoy it0 -
I used one in a tropical trifle for pud today (30p in the Christmas leftovers isle in Tesco).
Layer the Jamaican ginger cake at the bottom of a serving dish. Chop mango from a tin, pour some of the juice from the tin over the cake to soften and top with the mango. Add a layer of custard and a layer of whipped cream. You can decorate it with crystalised or stem ginger.
Leave to chill - and enjoy0 -
I would just add some cream and eat it with a spoon, or even just squish the crumbs together and eat it with your fingers!!! (Assuming you don't have company, of course) I love Jamaica Ginger Cake!
Would also make a nice pud with custard, whipped cream and tinned peaches or apricots. (You could leave out the custard if you like.)
Hmm, I wonder if the crumbs would toast or if it is too sticky for that? I am imagining it used to top a fruity crumble...

I am now craving Ginger cake, with hot custard, got the custard, might have to go to the Coop, they dont shutt till 10make the most of it, we are only here for the weekend.
