If you don't actually want to stop in Sin/HK then I suggest you fly Qantas or BA
LHR-MEL (direct - change aircraft in Sin/HK but don't stop)
    MEL-BKK via SYD
    BKK-LHR.

the best price I could find was £1201 using ITA software.

We did this route in Nov 08 and it was over £900 each. We also booked 12 months in advance.

You are trying to travel at peak holiday time in Australia and the prices will reflect this.
