My boys made a apple & blackberry pie once with cooking apples & no sugar... (though lots of mess, DS2 was 3 1/2) and I made very sweet custard to go over it.0

200g pl flour
250g caster sugar
1/2 tsp bicab of soda
1/4 tsp salt
1 lg egg
125ml buttermilk
1 tsp vanilla extract
125g unsalted butter
2tbsp cocoa powder
175ml cocoa cola
for the icing
225g icing sugar
2 tbsp (30g) butter
2tbsp (45ml) coca cola
1/2 vanilla extractkonMarie and fabbing all the way

180/ gas mark 4
22-23 lined springform tin
cook for 40 mins
mix flour, sugar, bicarb and salt
in another bowl mix egg, buttermilk and vanilla
in a heavy based pan melt butter, cocoa powder and cola gently. then add this to dry ingredients
then add eggy mix and beat well
pour into tin and cook
leave to stand in tin for 15 mins to cool slightly before trying to unmold
turn onto a wire rack with paper under it to catch drips
to make the icing
sieve icing sugar
in a heavy based pan combine butter, cola and cocoa powder stir until butter has melted
remove from heat and add vanilla then spoon into the icing sugar beating well until you have a spreadable but runny icing
pour this over the cake while its still warm then leave to cool

Hi guys,
i've had a quick lookie through the index & several threads and have googled a bit but i'm after recommendations & advice!
I've made a chocolate fudge cake to take to work tomorrow for my b'day, now need to make the frosting, i was going to use a delia recipe which used evaporated milk-i have, but it also used soft brown sugar-which i dont have! Does anyone know any other tried and tested chocolate fudgey frosting recipes?! or suggestions-could i blitz demerera in a food processor to smooth it?!

soft brown sugar has a different taste to demerera. if you have dark brown sugar i'd use that half and half with caster.Cats don't have owners - they have staff!!DFW Long Hauler Supporter No 1500
