  • I didnt have a cake tray, so i just used an oven tray, and i didnt have scales so maybe i got the measurements wrong. Still doesnt explain why they all just turned into a big flapjack, spread over the entire tray.

    I use a tray too, I bought some of those rubberised cups the other day but not sure if I trust them, perhaps you overfilled the cups? You should get about 20 or so if you use banana in them?

    Hi hun I use 2 eggs and 4 oz of sr flour, caster sugar and butter. Makes about 18 obviously can be halved to make less. Couldn't believe cost of caster sugar other day!!

    Always 4, 4, 4, 2 and you can't go wrong. Gas mark 4 for 15 - 18 minutes.
    If you mix the butter, eggs and sugar, add the flour last it'll be fine.
    I add 2 oz of sultanas too, to pack 'em out a bit more....

    I'd say for baking, you need to be pretty accurate on weights, so that may be your problem :confused:

    I'll add this to the Baking QQ thread, to keep ideas together.

    I did get the recipe out of my nan's book ;) it
    s so simple to memorise too, all the 4's and 2 eggs.

    I got my scales from Asda Smartprice, think they were £1.90.

    I am after a fool proof recipe for Butterfly cakes:confused: .....can I have full recipe and recipe for a great butter icing......please:D

    Also any very easy biscuit/cake recipes appreciated. I cant use my hands well, so if anyone has a recipe with a small amount of hand using:p ...that would be great!

    Butterfly cakes is the same as fairy cakes but with a buttercream 'topping'.

    75g (3oz) unsalted butter
    175g (6oz) icing sugar
    a few drops of Vanilla Extract
    few drops of warm water

  • Am i putting too much baking powder in? the recipe called for 2 teaspoons but the people who have tried the cakes think there was a slight twang in the taste. Also, they sagged down in the middle, how do i stop this? Mum reckons its because i opened the oven whilst they were cooking. When they have finished cooking should i leave the door shut, switch the oven off and leave them in there for a bit?
