    Hi kriti
my Be-Ro book is a really old version so not sure if this is the same recipe your use to but here it is.

    Easy Fruit Cake (boiling method)

    12oz Mixed Fruit
    4oz Sugar
    4oz Butter or Margarine
    1/4 pint of Water
    1 Egg
    8oz Be-Ro S.R. Flour

    1) Place fruit, sugar, margarine or butter and water in pan, simmer slowly for 20 minutes.

    2) Allow to cool, then add beaten egg and stir in flour

    3) Turn into a greased 6 or 7 inch tin

    4) Bake in very moderate oven (300-325 F, gas mark 2-3) about 1 1/2 hours.

I would have thought so too but I have got a recipe from a US site called 30 day muffin mix and they reckon you can keep it in airtight container in fridge for 30 days. Have not tried it yet though so cant vouch for it
I have found this one from Rachel Allen 30-day muffins but I havent tried it yet (waiting for Remoska delivery).

Bought a couple of bunches of reduced bananas today and want to make a no-sugar banana cake for diabetic in-laws - anyone got a recipe please (preferably for one that will keep). TIA.

This one looks good ;) Bananas and dates will add sweetness.

Thanks. Have also found this one with English measurements;) . But I might substitute the raisins for dates.

Hi. I want to make this cake:
    http://forums.moneysavingexpert.com/showthread.html?p=13763755#post13763755
But I thought this time round I'd do half wholemeal. So I'd be using 2 cups white SR flour and 2 cups wholemeal flour...I have bicarbonate of soda so how much of that would I add, please? Also, does anyone know of a reliable conversion site for cups -> grams? I used a teacup last time but all the raisins sank (can't remember the site I used before.) so I'm kinda wary of doing that again, though I suppose it could have been anything.

    Thanks.

Edit: Just realised you're meant to use baking powder but I only have bicarb.
Edit again: I was just reading on wikipedia that acidic compounds induce this, e.g. phosphates, cream of tartar, lemon juice, yogurt, butter milk, cocoa and vinegar. I have lemon juice and vinegar. I don't know if this edit is even necessary but, yeah. Any help appreciated.
