SR flour is plain flour + baking powder. Do you have cream of tartar? Baking powder is one part bicarb to two parts cream of tartar (tartaric acid).
Or stir the bicarb into the dry ingredients and add a splash of lemon juice or vinegar when you add the liquid ingredients. Bicarb needs an acidic liquid to make it give off the carbon dioxide that makes the air bubbles that make the cake rise.If I'm over the hill, where was the top?0 -

the bake off will be a lot of fun.
im going to make both next week and see how they turn out, but im only going to make them in loaf tins to start with. as it happens i seem to have all the ingredients for a christmas cake anyway.0 -
After further consumption of this cake, it seems a bit dry too. Not the nice, moist, sticky parkin you'd expect.
I'm sure the addition of oatmeal has a lot to do with it.If you lend someone a tenner and never see them again, it was probably worth it.0 -
Try this
YORKSHIRE PARKIN
8oz fine oatmeal - medium works just as well
1 tea spn baking powder
1 tablespoon ground ginger
8oz flour - I used 4oz of sr and 4 of plain
Mix the above together in a large bowl
1 egg
10 fl oz milk
Beat the above with a fork
8oz brown sugar
8oz dark treacle
4oz butter / marge
Melt the above either for 1 or 2 mins on high in a microwave or in a pan
Combine the lot and cook for 30 mins on 180 then 30 mins on 150. Check with a skewer
As I said its a very runny mix but goes nice and sticky after a day or so.
Make it lighter by using 4oz golden syrup and 4oz black treacle.0 -

I know I saw a recipe somewhere for strawberry creams (like peppermint creams but with strawberry) and now I cant find it. I have searched and searched but no luck
I do have a peppermint cream recipe so if all else fails I could just use it and substitute the peppermint for strawberry...............??
