I have made two parkin loaves, both perfect. The mix was very liquid. The recipe said to cook on a higher temperature for 30 mins then reduce temp for the last 30 mins and do the usual cocktail stick test. I also used a silicon loaf mould.0

Just an idea - did you sift the flour and bicarb together before folding in? - that would have added more air to the mix to help it rise better.
Yes. Flour, ginger & bicarb all sifted.
Could it be the fact that I use the cheapest flour I can find (Morrison's value range), rather than the posh expensive ones?If you lend someone a tenner and never see them again, it was probably worth it.0 -

The recipe calls for a loaf tin, and I've used it before with no problems. I have got two loaf tins though, which are slightly different sizes. I used the bigger one this time.

I did my best to persuade my children to have a go at baking when they get home from school, so I am hoping that there might be something scrummy waiting for me when I get home (as well as a might mess, but you can't have everything!)0 -
