Ginger biscuits or if you have a little cornflour how about a lemon meringue pie? You're a bit of suet away from making Sussex Pond Pudding http://en.wikipedia.org/wiki/Sussex_Pond_Pudding but maybe you can improvise? I bet you could knock together a lovely lemon & ginger cake as well or just ginger cake with the porridge oats in, lemon & ginger go really well together I think. Hope that's helps a little.

What about lemon and lavender (if you have any in the garden) shortbread. It's so lovely and the two flavours work really well together!

Well, think I'll make some lemon shortbread. Lemon rind in the mixture and lemon icing for the topping:eek:

    Thanks guys.

Sorry, I've had to delete a post for breaching copyright rules. Original recipe here.

I vote for a lovely lemon tart! Just right for summer. There are endless recipes but Delia's is here.

Just received cake made my mother in law for my sons christening tomorrow. The plan was she was making the cake and putting ready to roll icing over it and I was going to put the cake topper on. Unfortunately the cake has obviously got warm in transit and when I opened the lid of the cake box a large patch of the icing came up with the lid!!

The cake topper is a 3D train, so is not going to be able to cover the patch. Do I just try and squidge the icing that came up back in the hole? Do I cut away that bit and patch it with some new icing? Do I take off all the icing from the top and recover the top? Do I take off the icing from the whole cake and start again?

Really don't want to do the last option if possible as I'm useless at doing things like this and mother in law has piped icing round the bottom and iced sons name onto the side of the cake!!

Any ideas, suggestions or help? I've tried googling but for once can't seem to find anything!!
    Thanks,
    Flis

Have you some more icing? Roll out another piece (you could colour it if you like) and make it into a drape, or a big star to cover the patch :)

    Enjoy the christening :T
