Hi there, some of our faves are: spanish omlette cut up into cubes, pepper and onions in garlic and tom sauce, garlic mushroom, chicken in garlic butter, cubes of potatoes roasted and served in chilli mayonnaise, and don't forget a large jug of sangria!

I've never made tapas, but some of the recipes on these links seem typical of any I've had in restaurants.

If you're going to do olives, get the cheapest el-cheapo green ones from G&Ts (or your equivalent cheapo shop) and marinade them yourself in an assortment of herbs (eg herbes de provence) and some olive oil. Leave them as long as possible before you eat them. It's astonishing how you improve the flavour out of all recognition by doing this.

If you want to spice things up a bit, the Mexican version of tapas are called antojitos.

There are some nice recipes here:

Mmm.... Tapas.... Chorizo in red wine, meatballs in spicy tomato sauce, asparagus wrapped in bacon, patatas bravas (potatoes with spicy tom sauce), roasted aubergines made into a dip, chickpea puree, sticky garlic prawns, chicken liver pate with crusty bread, olives... Sorry got a bit carried away there, tummy rumbling ;)

how about tapas and drinks (should be dry fino sherry) as starters, so people can help them selves and chat a bit at the same time without the formallity of sitting at the table,
Then main course> Paella or pork (cerdo) fillet (lomo) is always a staple Spanish maincourse or Chicken (Pollo) with veggies eg roast veggies including aubergine, mushrooms, peppers, potatoes what ever you've got
Pudding> Natilla ie cold vanilla custard with biscuits, fresh fruit of the season (out here it's peaches, plums and cherries at the moment) or the other one served everywhere Creme Caramel
finally Strong coffee with whiskey (for some reason the Spanish love whiskey)

I'm probably being daft here but what's G&Ts?
