What can I do with tons of nectarines & melons?

I need some help, urgently!!

My sister has been helping out on a fruit & veg stall on the market today and has just dropped off 2 TRAYS of damaged nectarines and 8 damaged galia melons :eek:!! "Here you go" she said "You're always going on about food waste - so do something with that lot!!" :confused:

I've not got a lot of freezer space left and have never made jam (but am willing to give it a go) although I do make a lot of chutney - so have jars, etc handy. Also, OH is away until Wednesday so there's only me to eat stuff.

So, the gauntlet has been thrown down :rolleyes: Has anyone out there got any ideas.... Please....:D

PS Have also got some plums, a few pears, a mango, strawberries and cherries - but these will all keep for a few days.... The fridge is packed to the brim! :rotfl:

  • A fruit salad? If the fruit is just a bit bashed but not rotten I'd make a big batch up and use it for packed lunches, puddings etc.

    Jam, chutney, pickles for the nectarines- google should help;)

    Freeze all of it on baking trays cut into chunks (the fruit not the trays:D) and when hard gather into bags for smoothies.

    Nectarines -puree and freeze ready to add to champagne/prosecco/cava for a sort-of bellini.

    I've always liked melons and am partial to a nice pear!

    Anyway...
    How about making them into smoothie ice lollies?

    Nectarines =
    Jam
    Base of fruit-with-sponge-on-top cake,
    Stick some in a jelly
    (freeze whole if you really can't think of anything to do with them)

    Melon =
    Eat
    Use as bowling balls
    (really stuck here!)

    You could always slice the nectarines and put them in brandy or vodka and preserve them that way, then you have some lovely alcoholic fruit that should be ready for christmas...

    chop up nectrines put in an oven proof dish dot with butter and sprinkle over sugar...bake and serve with icecream or cream....u could cook up with a bit of sugar and freeze in bags for crumbles....melons could u make balls/cubes and freeze...when u defrost serve with port poured over...u could make smoothies...good luck
