I picked up some nectarines yesterday and some low fat creme fraiche, with the vague idea in mind that it would be nice to poach the nectarines and serve with the creme fraice. Having got them home though, I'm not sure exactly how to go about this! 
Any ideas for poaching liquid, and how long should I simmer for? Alternatively any ideas for a dish involving nectarines and creme fraiche, which would suit my slightly fussy parents, who are arriving tomorrow (and thanks for all the great suggestions for main courses in my earlier thread)

what about peeling and halving nectarines, put in bottom of shallow dish pour over some brandy, then sprinkle over a mixture of brown sugar, ginger, cinamom and nutmeg, (any quantities) leave for a few hours basting occa\isionaly with the sugary juice then bake for 30 mind 180c lovely! can use tinned peaches in surup for this reipe too, it realy is yummy! any liquer or spirit will be fine or fruit juice if non alcoholicMember 1145 Sealed Pot Challenge No4

Split them in half, put them in a baking dish, sprinkle with a knob of butter and some sugar. Bake in the oven 160 c or gas 4 for 20-25 mins. Lovely.

Thanks - both sound lovely and I'm definitely going to try both, but this time round am going to go with Heather's as being slightly less hands on work when I'm trying to entertain them full time too!0

Got a punnet today , ripe but rock hard. Anyway to soften them , usually they have gone off, if i just leave them to soften on their own.0

nectarines are very like other fruits and you can speed up the procees of ripening them by putting them in a brown paper bag with a brown banana.

This takes less than 5mins and is delicious.
Split the nectarine in half, add a generous dollop of marscapone and a sprinkling of demerara sugar then place under a hot grill until sugar and marscapone is melting into a lovely fudgey cream.0 -
what about making up a sponge mixture, line the dish with the nectarines and cover with mixture and cook, lovely served with custard0

My local Tesco was selling off literally hundreds of 4 packs of their Tesco Finest Donut Nectarines. They are lovely and ripe and huge (think cooking apple sieze!) and I bought 6 packs.
They need using fast as they are very ripe.
So far today I have made
A litre of nectarine sorbet (sorbet for 10p)
A litre of nectarine puree and popped in the freezer to use in the future
I've added some to the cherry brandy I started off today for Christmas
i've got a loads cooking with some plums for a freezer batch of crumble filling
I'm going to make a litre of icecream tomorrow when the bowl goes back in the freezer from the icecream maker.
I'll still have 8 or 9 left after that!!
I don't have jars to make jam, any thoughts??? I thought about chopping into chunks and just freezing but didn't know if they would be ok. I also wondered about some kind of tarte tatin, but thought they might just turn to mush.
Phew!!! Part of me wishes I'd bought more at 10p for 4, but I'm struggling to use themup before they get over ripe."Stay Wonky":D
