    On the basis of about 1 1/2 lbs rhubarb, I'd use about 4 - 5 tablespoonfuls of sugar ( about 2-3 ounces) but then I don't like it too sweet.

    Oh I see I like it much tarter than weezl:D If you're worried then precook in the tiniest amount of water, not much more than clings from washing it, on a gentle heat just to soften it down. At least that way you'll be able to adjust the sweetness.

    I'm a little bit worried that it might be a bit tough - some of the rhubarb's quite young & tender, but a few stalks are older, and a bit tougher....

    she only uses 3 oz sugar :eek: but then she puts bashed up sugar lumps on top :confused:

    so maybe I'll stick with my risky 6oz....

    Right, the pastry's resting in the fridge, and I'm resting outside it. :D I might have a go at Delia's another day.

    I'll go for an uncooked filling, and about 4oz sugar. If it doesn't work, it's Churchie's fault. :p

    I forgot to buy any cream. :doh:

    Is custard easy to make, and have I got everything I need to make it, or am I going to the shops again? :(
