Bulking out Meals?

  • I am going to make chicken korma curry from a jar (I know, I know, but it is sitting in my cupboard, so I may as well use it).

    It says to use 1kg of chicken, but I have 1,300g worth of chicken to use (in order to make three meals for me and bf).

    How can I bulk out the sauce so that there is enough of it? The jar I am using uses single cream as well, so can I just bulk it out using more cream and a bit of water, or will this just taste horrible?

  • Hi you could use veg/shicken stock with a little cornflour to thicken it up I do this to make the sauces go further :D
  • Courgettes, broccoli, any 'earthy' almost bitter flavour green veg work really well with tomato based sauces, especially with chilli added (courgettes about 16p each at mo), tomatoes, beans, tinned borlotti beans, butter beans, chickpeas, foul medames (think they're broad beans), frozen peas, frozen sweetcorn, rice, tiny pasta or noodles (orzo/couscous 39p from ethnic stores).

    Add a splosh of milk or crumble of stale cheese to tomato sauce and you get a creamier flavour and texture without having to add loads of fat. 1tsp of smoked paprika gives flavour of smoke without having to add expensive smoked bacon (other than perhaps as a garnish).

    Tofu in strong sauce (eg, spicy) adds protein without vast cost of meat (about 79p to feed 4).

  • Why not use tinned tomatoes (or a portion thereof) and a bit of cream if the sauce is tomato based anyway?

  • Depends if you want a curry or a bowl of sauce with chicken floating around in it! Swill out the jar with water if you need a bit more moisture. If it's too thin, boil it a bit more and add a gloop of mango chutney or sugar, both of which will thicken it again.

    I've been Money Tipped!
    I use a cup of milk, tablespoon of creamed co!!!! (grated) a small can of pinaple chunks or 2 slices chopped (and the juice or add half a cup of pineapple juice if the can only contains syrup), a tablespoon of raisins (or green pea's)

    I add this to korma jar sauce but sometimes make my own from the condensed cans or paste using full cups rather than half.
