We are having a chicken dinner tomorrow and my son has asked me to make soup with the bones, please can anyone tell me how to do that?

I just put the bones in a pan with water to cover add any veg thats getting a bit passed it and a bay leaf and simmer it for an hour (or however long you have longer the better tho)
then strain it allow to cool and put it in the fridge until the fat solidifies on the top and you can scrape it off and dont forget to pick over the bones for more meat its amazing how much more you get when its been cookedkonMarie and fabbing all the way

This is how I'd do it.
Stick the bones in a pan, add plenty of water, then set to boil. A bit of stock powder will help it along, as will any onion and carrot pieces. In the meantime, chuck chopped onion, carrot, garlic, etc, in a frying pan with a bit of oil/butter. Fry gently without browning.
When there is a pleasant chickeny smell rising from the stock pan, fish out the bones, etc, then add the contents of the frying pan to the stock. Let it boil, add pearl barley/ orzo/grain soup mix/ shredded chicken, etc and let it simmer for as long as you like. Or, you can blend it and add some cream to make it a smoother soup.

Not very good at soup but want to try again as I think it is a great winter warmer.
I have made stock from the chicken carcass and I bought a dried soup mix in Mr T at the weekend. Can I just make soup with this or do I need to add in some veggies or meat?:j Proud Member of Mike's Mob :j0 -
It won't be that flavourful if it's only stock however it can make a good base for many other things. My preference would be to use it to make a nice chicken noodle soup with some mange tout, garlic, ginger, a tiny amount of chilli and rice noodles mmmmm!

Another thing that is quite useful
If it's been boiled down to the point where you think it will become jelly (it's usually a lot more flavourful at this point) pour it into an ice cube tray, let it cool and then freeze it. Each time you are making a packet based soup or gravy from granules you can add a couple of cubes to give that genuine chicken flavour.
When I'm making my own stock I tend to add the odds and ends of veg with it (Onion tops and bottoms without the skin, the bits that I've cut off the celery, a hand full of any left over herbs.) It makes for a much more flavourful stock. Just make sure it simmers rather than boils as the veg can make the stock cloudy if boiled for too long.0 -
Hi is the stock now in jelly form? get rid of any fat then put stock in a pan with the soup mix which should have been soaked overnight. Personally I add veg either some cubed carrots onion and celery or a packet of Whitworths dried veg. you might want to add a sprinkling of mixed herbs too.0
