I throw anything in the pot, chicken, veg, onion, stock cube/s, BUT I always throw in a little of 'Soup & Broth Mix' - Its a dried mix of pearl barley, yellow split peas, green split peas, marrowfat peas and red split lentils in (I soak them overnight though) and cook it on the hob for a couple of hours - grown up son loves it! (Just like nanny made):o
Soup & broth mix cost peanuts in grocery store & 500gm bag of it lasts for ages & ages & ages0 -
can I just ask a quick question?
I did my first chicken stock today following a basic recipe in the "Gastronomy Economy" book and it said to cook on a simmer for about 45mins I actually done it for about an hour, but having read this thread I see its supposed to be like jelly, its wasn't it was liquid and I put it all in the freezer and a little in the fridge to make a soup out of, will this still be ok? Will the soup I make be ok?
I hope I haven't wasted my time and my wilted veg!
In future I will put it in slow cooker over night.0 -
my mum makes the nicest homemade soup so i thought i would follow her instructions:
I boiled the chicken bones with some meat left on them for about 20 minutes, i then drained it to leave the liquid and topped it up with hot water.
I added my potatoes and chicken stock (one of those posh ones off the tele) then i added the chickn back in to warm up and thicken with corn flour.
Looked hte same as my mum, but it tasted of nothing! so bland! i was horrible!0 -

yeah! she said it sounded right - the only thing we did diff was she said she kept topping up the water as it evoprated and i just topped it up at the end, do you think this is why?

Hard to say - maybe it just diluted the flavour b eing all in one? Am not sure...... Maybe you added too much water and diluted it too much?
If it was me, i would take upon myself to add things for flavour and totally reinvent it. What veg have you got?A little nonsense now and then is relished by the wisest men :cool:

I'd have cooked the bones for longer and not added more water until I'd tasted the soup. Tell me why you added chicken stock - wasn;t that what you were making from the bones?
I'd have left out the cornflour; potato will be enough thickening.
How about adding a ,ittle salt and pepper to taste?

Would definitely need salt and pepper and I would have cooked for longer. I do mine in the pressure cooker for 40 mins. Perhaps there was too much water? HTH and don't give up!;)0
