I use the following (nicked and adapted from Covent garden soup book)
chop an onion, couple of sticks of celery, couple of carrots, couple pieces of garlic and chuck in a pan with some butter and sweat for 10 mins
add 2 cans tomatoes, 1 tube/tub tomato puree, 1 litre veg stock and some tarragon with a splash of lemon juice (I love tarragon so shake a bit in)
put the lid on, turn the heat down and leave for 15-20 mins,
turn off and wehn cooled bung in the blender - I also put a large dollop of creme fraiche in
you can mess with the qtys as you prefer, I like nice thick soup with crusty bread. This one makes loads and keeps for a few days in the fridge, I usually decant into an empty 4 pint milk and then heat up as I need it
this and my chicken and tarragon (spot the theme), are my favourite, I don't touch canned soup, as this is almost as cheap, but twice as good and tasty0 -
Morning all,
I have been given about a zillion tins of Heinz tomato soup. Does anyone know of any recipes which have tomator soup in so I can use some of them up?
I'll be bringing some of them to work for lunches, but would like some variety if possible!
I've made casseroles and pasta sauces using chicken soup as a base in the past, but have never tried them with tomato soup. I don't know what it is, but it just doesn't seem right to put tomato soup in a pasta sauce. Or am I just weird?!?!

I'm having tuna pasta bake tonight, so will use one of the tins up with that.
I've never used tomato soup in cooking before (just reheated in and dipped some bread in!!) so it will be a new experience for me tonight.

Just want to say thank you for this. :beer:
I tried it last week and it was fab. Did just what you said, added a bit of Worcester Sauce and grated cheese on top. It was a tasty, filling meal served with garlic bread and salad. Yummy!
Am going to try one with smoked bacon and sausage this week instead of tuna.
