    hello - this recipe is from my mum and a firm favourite at weekends.

    sorry about the vague quantities!

    1 onion
    3-4 carrots
    2 x tinned tomatoes (plum or chopped)
    knob of butter or marg or tsp olive oil

    melt fat, sweat roughly chopped onions and carrots for about 5 mins.
    add tinned tomatoes and cook on a simmer for about 30 mins.
    blitz in a food processor or using a blending stick.
    add some water if too thick.

    can be easily frozen.

    Just made zubezubes recipe and its really nice, i did add garlic as well and i used butter not marg, so worth making!!! Thanks zube!!!!

    I make it similar to zubezube but substitute ketchup for tomato puree and don't add any salt or sugar

    I started reading this thinking I fancy some tomato soup but then remembered a box of frozen Jaffa Muffins that was in the bottom of the freezer from the Iceland sale so Jaffa.....

    this is my fave tomato soup recipe

    even my well fussy 3 yr old loves it !

    CREAMY TOMATO SOUP

    serves 4

    1 onion
    2 tbsp olive oil
    tin chopped toms
    1/2 tsp caster sugar
    200ml veg stock
    1 bay leaf
    2 tbsp mascarpone cheese
    handful fresh basil leaves
    salt & pepper
    2 tbsp fresh cream

    1) peel & chop onion into small pieces.
    Cook in the olive oil until soft
    2)Add chopped toms,sugar and stock.Drop in the bay leaf and cook gently for 15 mins
    3)Take pan off heat and add the mascarpone and basil.
    4) Blend until smooth,season if necessary.
    5) serve with a little cream swirled on top

    It's easy to do and you can omit the peppers if you don't like them :)

    This is my mum's recipe for Tomato soup. Called "Tiger" soup in our family because we always have it when we go to watch rugby (the Leicester Tigers :D) We're original. In fact, when my dad was in hospital recently, the only thing that he would eat was Tiger soup!!!!

    Tomato "Tiger" Soup
    2 pints chicken stock
    1 tin tomatoes
    1 tin tomato puree
    2 tblsp demerara sugar
    juice of 1 lemon
    salt & pepper

    Process tomatoes.
    Combine all ingredients
    Heat and season well.

    Serve!

    I like mine to have a bit of a kick to keep out the chill.

    1 onion and 1 clove garlic and 1 red chillie sweated down in pan, add 2 tins of tomatoes and a little stock simmer for bout 15min then let cool and blend.

    How do you sweat onions? does it just mean cook em for a little while till they go soft? :confused:
