Well it was a success
I put 1 sweet potato, 2 red peppers, 1 cup red lentils the litre of tom juice, garlic, tons of black pepper and some italian herb mix.
It turned out lovely if you ignore that I spilled a load of sugar in it when I was supposed to be adding a tiny sprinkle so had to add a bit of lemon juice to even it back out0 -
Hi There
Perhaps its too late but i usually use a small carton of tomato juice in bolognaise or Chilli. Couldnt you freeze it if 1L is just too much to use in one go?
Just a thought

My tomato soup ( or bolognese sauce) is a thing that starts the day before. Only basic rule is it has to have tomatoes in. And at least half an onion, or tired spring onions, or a base of a leek...and garlic.
ROAST the thing first is what I do, when oven is on for the evening meal, just brush the tomatoes and what else you have to use with OLIVE OIL I chuck in any pepper I might have handy or to use up, even a green one is fine, butternut, courgette, celery. Lightly roasted day before, heated and zapped in blender day you want it. I add a dash of Elmlea, keeps longer than cream.0 -
I can recommend the passata sold in Lidl, reasonably priced and good for anything tomatoey0

Hi lappish, this is how I make tomato soup.
Ingredients:
tomatoes, potato, chicken stock, onion, garlic, basil
Method:
Chop tomatoes in half , add slices of garlic, drizzle with olive oil and roast at a high temp in the oven. No need to remove skins.
Once beginning to brown at the edges the tomatoes and garlic are ready.
Sweat potato and onion in a little oil over a low heat until beginning to soften.
Add oven roasted tomatoes, garlic, stock, teaspoon of sugar and some basil. Simmer gently until all the veg are cooked.
Whizz with a stick blender until smooth.
Serve with a swirl of cream and some crusty or herb bread.
Pics of how I do it are here
There's an earlier thread with more recipes:

I'll add your thread to that one later to keep the recipe suggestions together.
