    Its a tex-mex style sauce, comes from the south west area of the US;)

    OP if you buy Romaine lettuce it lasts a long time (it lasts the week) & you normally get two in a pack & you could make a ceasar salad with it. Shredded lettuce, crutons, parmesan shavings (buy a block - much cheaper & use a potatoe peeler) & ceasar dressing, chopped chicken is optional.

    Seeing as there have been lots of tortilla recipes on here you could make your son some home-made tortilla crisps with the tortilla's, season them with whatever he'd like and maybe pack him a small pot of homemade salsa / store bought houmous with some fresh herbs mixed in. Posh looking and tasty, I used to do this at Uni because the lunch hall was packed and the food was fairly unpleasant!

    Plushroom, do you deep fry the tortilla's to make them into crisps?
    Like the ceasar salad idea - quite posh looking and great if it keeps for the week!
    I've just been putting all the items in little tupperware dishes is this the best idea? as on a couple of days it looks like DS has a mountain of food - and a mountain of washing up- lol!
    Was going to try a salmon and asparagus quiche for next week but again don't know how to package it so it won't bounce around a tupperware box or be squished in a bag!
    Grateful for suggestions..will try and post my lunch menu plan for next week at some point today and again any comments welcome!

    Hi
    As some people might remember my kids had/ have a lot of stick at primary school for their packed lunches, but ds1 has no trouble at grammar school now. Things my kids like are:
    HM soup in a flask
    l/o beef chilli in a flask served with a little bag (tesco value freezer bags) of tortilla chips (value)
    for quiche/ pasta salads etc I use the flat plastic boxes that you get Chinese takeaway in - a piece of quiche and some salad fits in nicely
    a tub of side salad made with l/o peas, chopped apple, spring onion and marie rose sauce (mayo and ketchup)
    any l/o chinese takeaway!!!
    chicken drumsticks with a coating of yoghurt and curry paste served cold with cucumber sticks and naan bread
    mini pies made in muffin tins
    spare ribs
    burger in a bap with a sachet of ketchup to add at lunchtime

    If you're not taking advantages of offers, get the offers then come on here and ask how you can transform into a posh lunch! You will get the hang of it I am sure.

    Regards the brown apples, I am *pretty* sure lemon juice or something citrusy will prevent this. Do a sample next time? I read somewhere about soaking in sprite too as it is acidic but not done that myself!

    Caramel bar - Sure, why not! lol. Maybe split the batch and try that with a smaller amount just in case it doesnt work. If it was me, I would keep them intact squares and add to the mix very last thing. They will more than likely burst in the muffin - I did fairy cakes with mini creme eggs in and they burst everywhere, was like sticky toffee fairy cake. Where's that drool smiley?!

    Divine isn't it?! I dry fry walnuts, cashews and sunflower seeds and add them in for extra taste. YUMMY!

    I tried to add to my post earlier, right in the middle of the forum fix!:rotfl:

    I was saying, regards the quiche, could you try to make them to fit the certain shape of a certain piece of tupperware? IE if you have a little circular one , you could try making muffin shape quiches to fit that box, maintaining shape and structure? Just a thought.

    Ok, as promised here is next weeks lunch list!

    Mon - Mini Thai fishcakes and sweet chilli dip,carrot salad, mars muffin,
    Tue - Salmon asparagus quiche, fruit salad
    Wed- Meatball, cheese, bolognese baguette, custard tart
    Thu- Cheese savoury crusty roll, fruit salad
    Fri- Sweet chilli chicken wrap, cherry madiera cake

    I know at first glance it doesn't look too healthy but DS eats his 5 a day of fruit and veg and exercises loads so don't think a little cake here or there will do too much damage. Any ideas appreciated.

    Also was hoping I could find a way to incorporate these ingredients into meals so not too much waste e.g. roast chicken - then use for chilli wrap

    I personally bake them using this recipe http://allrecipes.co.uk/recipe/867/baked-tortilla-crisps.aspx I tested it out with homemade tortilla's from the recipe given on here and they were lovely - though I don't always follow the recipes seasonings, I use whatever I fancy - worked out very nice with salsa if you put dried oregano into the tortilla's when making them.

    I've made myself hungry now!
