I'm definitely going to have to try Artisan bread and making tortillas! Mrs M, have you tried substituting the white for seeded/ brown/wholemeal? Would just be curious how that worked out if it made them more healthy ?
Thinking back to school ,i went to a posh all girls grammar school - my Mum was a single parent and drove a skoda, one of my friends had a swimming pool in their garden..... I got free dinner tickets and i remember feeling really singled out becuase of it , never told my Mum though. Didn't really matter as I was quite the loner in school.
Anyway, sad as it is , you are doing the right thing helping him be like others. At such an impressionable age, no one wants to be left out. Once he has settled in, he may relax a bit more and won't necesarily need the "posh" lunches.
Have you tried making your own muffins? Banana and mars bar for eg - he will be the envy of his friends I am sure!?
This is Thriftladys recipe and was gorgeous. I added a king size mars bar in. You could experiment and also helps towards 5 a day

good banana muffin recipe which can be made in a cake or loaf tin if you give it a bit longer in the oven. Thriftlady
Btw, you can freeze bananas for baking .Just put them unpeeled in a bag in the freezer.I always do this with over-ripe ones-perfect for baking.
Banana Muffins/Cake/loaf
Put in a large mixing bowl
10 oz plain flour
1 tsp baking powder
1 tsp bicarb
1/2 tsp salt
In another bowl mash 3 bananas(the riper,the better)
Add
4 oz sugar
1 egg,beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
2-3 fl oz milk
3 fl oz vegetable oil or melted butter
Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater,the mixture should look quite lumpy.
Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.
You can obviously add chopped nuts,raisins,dried apricots or choc chips.Some mixed spice is nice too./END
You could make him a smoothie some days to go alongside his lunch- throw in loads of ice and it keeps it cold for hours. Nice posh (I think) sandwich filling is Coronation chicken . Dead easy to make, tasty, and I add mixed nuts and dried fruit to bulk it up and give some crunch and taste.
Here's an idea, recplicate posh lunches from Starbucks lunch menu . I remember going to Pret a manger in London and I would view their stuff as posh! They give all their recipes too here . First one that jumped out was Leek and potato soup - that's not so poshI think it's more the little twists like seeded bread, and rocket as you say.
And by the way, South west sauce is amazing , really yummy. Back in the days when I did eat Subway, it always had SWS on it. It's ok to say its from there - is it?A little nonsense now and then is relished by the wisest men :cool:

A filling for wraps that I like is bean and cheese.
Drain a can of kidney beans and rinse.
Finely chop a spring onion or two.
Grate some cheese.
Mix them all up in a bowl with mayo. Warm the wraps in a microwave for about 20 seconds.
Shred some lettuce and lay on the wrap and pile on some of the bean and cheese mixture.
Fold up the bottom of the wrap first, then fold in the sides. Wrap tightly with clingfilm.
You an add other things to the mix, such as tinned sweetcorn, sliced pepper or chillis, celery etc. You can also add some taco or fajita seasoning to the mayo.0 -
The wrap recipe I use is even more simple, taken from one posted here but unfortuntately I cannot remember by whom
12 small wraps or 8 medium sized ones
12oz/340g plain flour
14 tbsp water/180ml
1/2tsp salt
2 tbsp olive oil
I do not add the salt and use any old oil
I measure out the flour - put water and oil into a jug and then add slowly - first mixing with a knife and then with a my hands - it starts of crumbly then works together like pastry. I then leave it for half an hour with a damp cloth over the bowl.
Then divide into 8 (or 12) and I use olive oil squirt to fry them in the pan - just takes a minute or two each side.
Easily frozen and stay soft and pliable even when defrosted, we rarely buy wraps at all now.

Hi when my son's started High School most kids got money, mine includd, however sfter a while they got fed up queuing and asked to go on packed lunches. Or maybe give him money once, twice a week as a compromiseStarting to save £2 coins again, but it is a struggle:rotfl:Not doing very well keep spending them

Pret a Manger have a recipe book, check your library for it. I must say I'm quite impressed your ds wants such sophisticated lunches. The usual problem with kids and their OS lunches is that all the other kids bring junk.

My son had the same problem and was throwing his lunch away rather than be embarrased and taunted by other kids.
So I send him with a couple of smart price pitta bread or HM bread rolls filled with Chicken and salad or Tuna and sweetcorn etc
Plus a yoghurt, a few pieces of fruit a bottle filled with fresh orange juice and a homemade Twinks and he has had no problems sinceBlessed are the cracked for they are the ones that let in the light
