Try homebrew shops for the citric acid, or perhaps Wilkinsons in the home brew section.

Blackberry syrup (makes 2 pints)
4-5lb ripe blackberries
6oz sugar per 1 pint of juice
pick over and wash the blackberries.Put in a large pan with 1 pint of water,bring to the boil,then simmer to extract juice,about 45 mins.Strain through a jelly bag,leaving to drip overnight.
Measure juice,weigh out required amount of sugar and place in a warm oven to warm slowly,pour juice into a clean pan,boil gently for 10 mins ,allow to cool a little then add the sugar,stir until dissolved,return the pan to the heat ,boil gently for 20 mins .Store in clean sterilised bottles.
Strawberry syrup (makes 1 pint)
1 1/2 pounds of strawberries
1 1/4 lb sugar
clean and crush strawberries in a pan,then add 1lb sugar.Cover pan,place over a very low heat for 1 hour.Bring just to boiling point,strain through a jelly bag,pressing all the juice out,add the remaining sugar to the syrup,bring slowly back to boiling point.Allow to cool then store in sterilised bottles.0 -

Following an article in this weeks Daily Mail (:o) I have made my first ever batch of elderberry cordial and it is YUMMY:D I just used equal parts elderberries & sugar & boiled to a syrup. The artical said it would keep upto 4 years when bottled? This sounds like an awfully long time for a fresh product, does anyone have any experience?
Also, can I make other cordials using the same method? I am thinking lime would be nice? Anyone practised in the art of cordial making?

I had a bowl full of blackcurrants off my twigs over summer.I did the same but squeezed through a sieve to remove seeds.I added it to ice cold lemonade was lovely but got guzzled straight away so cant say if it keeps0

We have it too. We call it "flowerade" in our family as we normally have it with fizzy water. It never lasts long enough in our house to know how long it can be stored for but we have had it for at least a couple of weeks. It can certainly be frozen.0

hi lillibet, my dh and i went looking for elderberries this afternoon with no luck though i know where there is but they are not all black yet
what kind of bottles did you use and how did you sterilize them? i plan to do the mail recipe too and what type of brown sugar did you use? sorry for all the questions meant to say dd not dh0 -

Don't see why it shouldn't keep if the bottles are sterilised as the sugar will act as a preservative (think about it - sugar doesn't go off, does it, and neither does jam, which also has fresh fruit in it). Once the bottles are opened it will deteriorate faster. But as gingin says, it freezes beautifully - I froze some elderFLOWER cordial earlier this year - in small plastic bottles so it doesn't take too long to defrost. And following someone's advice (also on here), I froze some in ice-cube trays which I then transferred into plastic freezer bags so you can have an instant drink whenever you like without getting the whole lot out of the freezer. The elderBERRY cordial sounds lovely but all our elderberries seem to be over - I only found one solitary sprig when I was out this morning. Oh well, I'll try and remember next year - or find another source...0
