Homemade Vegetarian Sausages

Has anyone made tasty vegetarian sausages? I mean ones made with a meat substitute like the Cauldren or Linda McCartney ones that you can buy.
Cauldren sausages are now in packs of just four for £1.50, they are extortionate in my opinion so I would like to have a go at making some.

I'm not vegetarian but I enjoyed these: Annabel Karmel vegetarian sausages They aren't made with meat substitute though so may not be any use to you.

not homemade as such but healthfood shops sell 'sosmix' - a dried mix you make up with water. I think its usually around £1 - £1.50 max and I use 1/4 of a pack per meal for me and OH - so less than 1/4 of the price of cauldron! If I had to compare I'd say they're most like linda mccartney veg sausages.
(btw Asda have the cauldron lincolnshire sausages at 75p at the moment!)0 -

Thanks, I used to use the Sosmix for sausage rolls, I've not used it for years so I had no idea of the price.
I'm off to Asda soon, the sausages were full price on Tuesday but I will check again.Nevermind the dog, beware of the kids!0 -

It wasn't what I was after but I will try those too. They would freeze well to be used for lunches for my 8mth old daughter.Nevermind the dog, beware of the kids!0 -
Nothing like Cauldron sausage *drool* but I make these quite often, they freeze really well and the recipe isn't as fiddly as it sounds!Lentil sausages
1 onion finely chopped
1 celery stalk finely chopped
1 red pepper finely chopped
175g red lentils
300ml veg stock – may need a bit more
1tbsp tomato puree
½ tsp marmite
75g fresh breadcrumbs
50g chopped nuts
Fry onion and celery in frylite for 3 mins, add pepper and lentils and cook for another minute. Add stock, puree and marmite, cover and cook for 20 until most of the liquid has been absorbed. Transfer to a bowl and add breadcrumbs and nuts, stir until well combined, season then leave to cool. Shape into sausages – makes about 12.
Spray with oil and either grill or fry for 8mins or bake for 20mins at 1800C
Variations:
Hot chilli – add 1 red and 1 green chilli with the lentils and ¼ tsp Tabasco with the puree.
Herb and garlic – add 2 crushed garlic cloves and 2tbsp chopped herbs with the lentils.
Spinach and pinenut – add 100g chopped frozen spinach instead of the red pepper and replace the chopped nuts with pinenuts.
Mushroom – add 100g finely chopped mushroom instead of the pepper0 -
Sosmix has been completely ruined, IMO. They changed the recipe so that it wasn't vegan, then changed it back again, but it's just so bland now, I don't bother buying it anymore
Sorry, I'm no help on homemade sausages, bt Tescos are currently selling Linda McM ones for 1.00 for 6, and Iceand always hav them for this price.0 -
I tried Asda's meat free 'sausage mix'. In a packet and a bit like sosmix in that you add water. It was edible but I think I'd add extra flavouring to it next time I try it.
I made sausage rolls with half the mix and they were nice!! I can't remember how much I paid but I think it was less than £1.0 -
I've a recipe for Glamorgan sausages that tastes just like sausages made from meat - I can post it here if you want. They aren't meat-substitute based, but they are yummy!0

Sosmix au naturel has always been bland, and I've been using it for around 15 years ! it is a great veggie sausage base but you really do need to add extra seasoning to it. It is still good value for money IMO - if you are looking for the meatlike qualities it fulfils that, very versatile as to use, can use as little or as much as you like & you can flavour it however you like and bulk it out with extra veggies."
