Cats are inquisitive creatures. I used to breed persians and currently have 4 at home (retired and ageing).
Personally, I have no problems with them getting on worksurfaces as they know it is not permitted.
Best tactic is just to say No in a stern voice every time they attempt it, and remove them back to the floor. They get fed up with it after a little while.
Same with clawing furniture - get a scratch post and when they attempt to do so on your furniture, say No firmly, take them to the post and holding their paws, paddy the post so they get the message.
Soiling - clean with usual detergent and spray with a mix of white vinegar and water (test area first if worried about staining). This helps lift any smell to prevent resoiling. Also can try putting tray there or food as they won't soil where their food is. Last resort, silver foil.
