A properly cooked piece of beef should never be "chewy"... Some cuts are best suited to slow cooking, others should only be cooked rare and anything else is an insult to the cow
DH likes his welldone to medium - just a tinge of pink in the middle...
I think the difference is also the steak itself - I only buy steaks from our local butcher (who has even been mentioned in Rick Steins food hero's!) because I trust him and know how clean it's kept there. I'd honestly never cook a piece of meat from a super market rare though...
As for undercooked pork... ewwwww

you've made me think of game now though! I was brought up on "chicken/beef" stew AKA anything from partridge, pigeon, vennison, pheasent etc I want some of my mum's mystery meat stew now!0 -
I know I will be really nervous because I have seen the worst that can happen.
A friend I made in here (who had the same as me) took a massive heamorrage and barely survived it.
I have seen at first hand how quick it can happen.
I live about 10 mins away from hospital and will defintely phone an ambulance at the first sign of blood.
Although I feel terrified im now starting to get really excited0 -

I had my first blue steak whilst in Hungary. I asked for a fillet steak rare, and it was blue but the waiter explained that was rare to them. I tried it and loved it, and refuse to eat steak that isnt blue. I find steak that is more than blue is too chewy. All my friends and family think I am gross but they have not tried it and are amongst the "well cooked" steak eaters.
I think its like marmite, either you love it or hate it but that goes for each level of how steak is cooked. Amusingly in the UK when I have asked for a blue steak quite often the chef will come out of the kitchen to check that I know what I am ordering.......well I wouldnt order it if i didnt know what it was, as its not an option that waitrers and waitresses tend to offer. its usually "would you like your steak rare, medium or welldone?" Grrrrrr :mad: I miss my steak :rolleyes: I am so having blue fillet steak and mash with onion gravy once bubs arrives.DS1 arrived 22/02/11! 8lb3oz

Food is definitely one of life's greatest pleasures... which is why it's so sad when it becomes the enemy for women and a total battleground of self-denial.
The one time I managed to eat when I was hungry (whatever I wanted) and stop when I was full I lost quite a bit of weight, looked much better and enjoyed my food.MFW Challenge member no. 96 - on hold! :rolleyes:
