Just had a lovely time reading the fishcake thread(well done Taplady-I still can't seem to do links
).In Jeanette Orrey's new book 'Second Helpings from the dinner Lady' she has a recipe for 'Crispy Tuna and Cheese Nuggets' which are little nugget-shaped fishcakes.They're mash,tuna,cheese coated in egg and milk then breadcrumbs and baked.I thought these looked great for kids.

We had 4 of them last night for tea - they broke up a bit when I tried to oven bake them so I just shallow fried them lightly - they were very tasty iof a bit soggy hehe! Will definitly do them again though!!Kirsty, Taunton, xxx0 -

Tonight, I was inspired by everyone on here to use up some tinned fish I had in the cupboard and a potato that was lurking in the fridge to make my own fish cakes and they were great :j (even if I do say so myself!)
The only thing is, I underestimated quite how many fishcakes I would make, so I have a fair few left over. I think that I may have made a mistake in cooking the lot all at once - should probably have frozen them uncooked, but do you think it would be okay if I froze them now? Otherwise I'll be destined to eat fishcakes for the rest of the week!

Oddly enough I made fishcakes last night and ccoked the lot. I wrapped the uneaten ones in greaseproof paper, one layer between each and froze them in portions in freezer bags. I just assumed they'd be OK................and even if they aren't its DH who eats em not me or the kids;)WW Start Weight 18/04/12 = 19st 11lbsWeight today = 17st 6.5lbsLoss to date 32.5lbs!!!0
