Hi all! I have a query for you foodies.
I want to make my own tuna fish cakes tonight, but I want to be able to freeze them, preferably before cooking.
Does anyone have a recipe/guidance? I want to make at least 25 (preferably more if possible) and have 3 x 400g tins of tuna, loads of value spuds and eggs. Is this enough tuna? Do I need to add egg to the mash and tuna to make it stick together? Do I need to coat them in egg in flour? Can I just freeze before frying? How do I then cook them from frozen??
Sorry for being so dim - put it down to being both oregnant AND blonde hehe!

Hi !
I regularly make tuna fishcakes.Just Tuna and mash and seasoning, never needed egg to bind.I coat mine in egg and HM breadcrumbs.You can freeze them cooked or uncooked.(brown breadcrumbs are nice)
I cook mine by frying lightly on both sides in a little oil to give them a nice colour them shove them in the oven. I usually defrost them before cooking but I expect it's ok to cook from frozen, just takes longer.
I freeze them between greaseproof paper in an old icecream tub usually.

Thanks for this guys! I boiled up a load of value spuds, maashed them, added a 400g tin of tuna and some herbs and made into actual fish cakes!!! I got 12 huge cakes out of the mixture! I have left 4 out for tea tonight and have frozen the rest - they look lovely!Kirsty, Taunton, xxx0
