scotty1971 any questions you or your girlfriend have please post :) We'll all be happy to help.

devildog it can be an adventure :D I've certainly tried new things, low carbing.

sheila54 oh I know I'm not alone in being on the receiving end of treatment like that and the fork in food and wrong kind of shoes are the tip of the iceberg.:p

Part of it is the mistaken belief that Type 2 diabetes (and indeed obesity) can only be caused by gluttony and sloth and that therefore my diabetes is self-inflicted and I'm wasting precious NHS resources.

Now I can recount it and be amused by their ignorance and disrespect but at the time I was angry and shocked at having diabetes and the way in which I was treated added to it. As an ex chef I put a lot of thought into food and I just wasn't scoffing junk food.

These days I don't let anyone get away with it. I know so much more now that I'm not fazed and I can challenge them. I'd still rather not have diabetes though, it does interfere with my life. I want to see more people low carbing and avoiding it.

I read an article yesterday, in the Canadian news magazine Macleans about twin doctors in Toronto who seem to have found some evidence that Type 2 diabetes could also have an element of autoimmune disease like Type 1. I'm going to try and find out more.

Someone mentioned Cauli being grated and steamed-is this the 'normal' way or can you boil and mash(lol never cooked it before :)

    Hi Devildog,
I have been boiling cauliflower then blending with milk and butter to make a lovely fluffy mash. It is also good roasted for 30 - 45 minutes possibly with a little lemon zest and juice.
I never knew how good it was before.
Celia Brooks Brown also has a lovely cauflower soup recipe in her book.

    Hi All

Lurker here, I became a convert to the low carb a while ago but things intervened and I have lapsed for the past month and as things go, the longer I eat crap carbs the lazier I get and the more trouble I have going back to it. So I'm really only typing in here to make myself do it! Right, bacon and eggs for lunch I think.

Devildog - You can steam and mash cauliflower (hand blenders work well as does lots of butter!) I'm a fan of cauliflower rice when I need something with curry. wash and dry the cauliflower and then grate on the large holes. Then microwave in a covered dish (no water added) for 2 minutes and it's got similar texture to rice...and it's easy which is really what I like about it :)

Thank you for all the thoughts about feeding children – having thought about it now, I guess I don't really need to worry so much after all.

A big worry I have is that DH has a really sweet tooth and a tendency to stuff himself with cakes, donuts etc. and as he likes buying coffee when out, this tends to resolve into visiting coffee shops and buying cakes for DS whenever they go into town etc. I guess I just don't want him to get into the habit of eating too many cakes!

On the other hand, since I started talking about low carbing, he's started mentioning when he's had too much sugary stuff, so perhaps I really don't need to worry at all, bless him. :-)

The allergy thing at school is apparently not just about the idea of them swapping foods. Apparently some children have allergies so bad that even a child eating an egg and touching a wall and then the allergic kid touching that wall can result in an allergy attack or whatever.

(On the other hand, they allow cakes etc. and provide cakes as part of the cooked lunches, so clearly *some* things with eggs in are okay! But we were definitively told no eggs, no mayo and no nuts, no peanut butter etc. in their packed lunches. I dread to think how the vegetarians manage!)

Oh, also, there was no *way* I meant I wanted to ban sweet/carby foods! For a start, everyone would be miserable, and for a second, I honestly don't think DH would be able to support it! *g* I just meant trying to lessen them and get more protein and veg into DS, though I guess the veg is going to have to wait till he actually wants it. Having thought about it, I suppose he is getting most of what he needs from other things anyway. I do offer it, and he's good about trying it once, but I don't push more than that because I know that turning it into a battle will have completely the opposite effect to the one I want!

    Hi to shebrett :)

angelfeathers I'm really wondering how a child with an allergy gets an attack from touching a wall.. do these children never go out to a shopping mall or supermarket or play in the house of a child who eats nuts, eggs etc ???

I don't believe that they sterilise the hands and clothes of every visitor to the school, that the staff never have peanut butter or egg sandwiches and that if there are food technology classes in the school that the rooms used are entirely egg and nut free either.

I think they are wool-pulling. Besides which, kids with epilepsy are increasingly treated with ketogenic or modified Atkins diets as a first line treatment and how do you tell a parent of an epileptic child sorry your child can't have his specialist diet in case he touches a wall after eating so he'll have to put up with seizures at school ?

I'd be really annoyed that BS they were giving me without proof was stopping my child having the healthy diet I wanted him to have. It's impossible to keep a school clinically clean so it's BS.

Sorry.. gets off soapbox.. I hate stupid rules with ludicrous excuses for them and I come across them all the time from the NHS and it drives me nutz !

B - 2 free range boiled eggs, Earl Grey tea with Lactofree
L- clams pan-fried in ghee with thyme and black pepper on wild rocket
D HM vegetable bake to use up beg and cheese whereas OH gets Polish goulash from a jar and tinned French pommes Dauphinoise

daska and marbett one/both of you were wanting simple low carb recipes for a relative I think ? The quantities would need reducing for one person but Marks and Spencer has a pea and Cheddar frittata recipe video on www.marksandspencer.com

You have a good point there, Edwardia. I did question it at the start (September before last) and that was the explanation I was given, but haven't wanted to cause any trouble since. Might be worth asking again, though, especially I just thought to have a look on next week's school dinners menu and in the 'cold' option that includes egg mayo sandwiches...

Perhaps the children who are allergic to eggs have moved on!

It is very confusing because the section on their website/brochure about packed lunches says 'hard-boiled eggs should be cooked for 10 minutes until hard' (i.e. for safety), which indicates one can have them, but another section says 'As some pupils have severe allergies we ask that no nuts, peanut butter or eggs [e.g. boiled eggs / egg mayonnaise] are included in a child's lunch.'

    Very confusing!

shebrett=thanks for that, now I understand lol. I didn't realise that it was used as a rice substitute too.Doh.

re schools and allergies(having worked in a primary school) some things like peanut butter can 'hang' in the air and trigger a reaction, another major thing that children will do (despite knowing that it is not allowed) is to either swap or give away their lunch to another pupil.
Their website/brochure does appear to be confusing though and I think that this issue should be raised with the school. I also think that I would specifically ask the question "Are there currently any pupils who have an allergy to x.y or z?" Some may have serious allergies but it sounds like the school is trying to put a ban on obvious problem foods(just in case) Jmho. I would also point out how can they insist that parents do not send these foods in on one hand and yet the school itself is dishing out egg mayo. Highly contradictory.
    B-brazil nuts :)
    d-eggs/salad
    t=stir fry, bean sprouts,mushrooms,onion/garlic

All this talk of peanuts is making me want some sticky yummy organic unsalted peanut butter spread on 90% cocoa chocolate :D

Been catching up on Dr Robert Lustig's series on YouTube, The Skinny on Obesity which is really interesting. Learned that sugar is as addictive as heroin !! Also that obese pregnant mother = child who'll most likely grow up the same way.
